This is a steam stove. Which is diff from a standard one. The Dutch oven is meant to catch and keep cycling the moisture Hence the lid. Which is a replacement for a convection oven.

@@simperoni 15-20 min with the steam and after 15-20 min without steam. Time mostly depends on a bread size. The temperature inside the loaf should be should be min 96C/ 205F

You need steam. So you can use steam from your oven. Or you can create it with a bowl with hot water. Just put the bowl with hot water in the oven over the bread for first 15 min. You can watch a full sourdough baking masterclass here: kzbin.info/www/bejne/imLHdXisn7Z6r7c
