He’s always in the right place, he doesn’t make mistakes (the lvl 4 fight is the first time he’s made a real mistake and that was a flip play), doesn’t miss smites, plays proactively, and plays snowball champs that allow his proactive playstyle. He also has a team that plays around him. Basically, he’s an ideal, mechanically skilled player with a team that understands that and enables it.

Also i don't think the matchup is that polarised, given both players are on the same level theoritically the Gwen should win over time but K'sante has so many ways to dodge the ults of Gwen that it isn't really a counter and like we saw, Shanji can make that happen consistently. I would say Jayce wreacks K'sante pretty hard but teams think he isn't strong and it would take a really talented top laner to make that counter work anyways so they don't bother with it. Just ban K'sante IMO, why leave it up against good top laners if the counters don't really exist?
