the ratatouille served by Linguine in the film is actually Confit Byaldi, a higher class variant of actual ratatouille, which is more akin to what we see in young Ego's bowl, and it's essentially chopped up aubergine/eggplant, tomato, courgette/zucchini, onion and variable other ingredients to taste (sometimes pepper for example) all chopped up and cooked together in a dish, quick, easy, tasty and a staple of primary and middle school lunches all over france

Fun fact: The fish Remy prepares at the end of the movie is called tían. It is similar to ratatouille, but it is more of a casserole based dish. They have the same ingredients (eggplant, Zuchinni, squash, tomatoes, onions, etc.) but the difference is on how the veggies are cooked. Tían is baked as a casserole, while ratatouille is cooked in olive oil until made into a hearty stew. The stew is seen in Ego’s flashback, which is more accurate to what ratatouille is really like. The more you know.
