Most importantly, when forests are cleared for agriculture, it's to feed livestock, not people. Humans wouldn't need to clear that much land just to grow vegetable food sources. In fact there were indigenous groups in the rainforests of South America that grew crops sustainably in raised mounds within the rainforest. But you want to grow cattle feed? Well that's just gonna destroy the forest, no doubt about it.

Eating soy products like tofu directly is actually one of the more sustainable diet options available and a splendid alternative to a meat-based diet. Nevertheless, the way how soy is produced still matters: deforestation and the destruction of other natural habitats is a problem for the environment. The transport of soy products across the planet (e.g. due to labor cost differences) is a problem to the environment, especially when performed using fossil fuels or involving cooling.

There's one concern with soy that I'm surprised you didn't mention. Soy beans have a high amount of estrogenic compounds that can cause or significantly worsen hormone imbalances. Historically, Asian peoples for whom soy is a traditional part of their diet would ferment the soy products for years to break down the more harmful components, but today's modern industry artificially ferments soy by basically just adding a bunch of chemicals and calling it good. That process doesn't break down the estrogenic compounds quite the same way. I have PCOS, an endocrine disorder that causes hormone imbalance. I found out through accidently double-blind studying myself that I cannot eat chemically fermented soy products - vegan mayo, fake meats, grocery store tofu, etc. - but am fine with properly fermented soy sauce and other soy products.

Thanks TED for 10 years! Very interesting and educational video. As someone who is very allergic to soy and its derivatives, eating any processed food, and sometimes even using different beauty products is a nightmare. I live in France, and here the word Soy is in bold on all food ingredientss as an allergen. Why don't they do that in the US? Even here, it is becoming difficult to buy bread at the bakery but all chains must have allergens listed on paper and posted on a wall, or available to customers. Is it possible that one of the causes of so much obesity in the US is that not only do people eat too much, but that they are eating soy and are allergic without knowing it, causing bloating and weight gain?

I'm just going to add that even though soy isn't necessarily bad for you, in the grand scheme of foods it has a generally low absorption rate even in regular people who have good metabolisms. That's kind of why a lot of people get gassy when they eat it, t's because it takes more energy to digest what you can from it. Also, the fact that it limits your intake does help lower cholesterol and heart issues but in the same way that fasting can be healthy and lowers cholesterol and heart issues when done correctly.
