I didn't know this was a thing but I did find the minecraft:behavior.look_at_player is within 6 blocks and has a 2% probability of activating. So since they are within 6 blocks it should be an even 2% it looks at either player so the main factor is still it's natural pathing/movement.

I have a feeling that the sheep's AI was dare I say rigged at the end. It was obviously stuck looking at Keralis for some reason, and kept following him the entire time, likely due to the fact that he never left the sheep's range. It was able to look the other direction if Keralis was there, although it never had a chance at looking at Mumbo individually, meaning he was forced to lose, haha.
