This is what the Tarahumaras drink to run their 400 mile races. Plus it's delicious!!! You don't even have to run.

Fake tejuino, the real tejuino is made with fresh masa. Tejuino is essentially an atole made from piloncillo, masa, water, and a little bit of lime juice that is left in a clay pot to ferment for up to three days. As most things in Mexico, it’ll be prepared and served differently depending on where you have it. I believe in Jalisco it is customary to serve it with lime sorbet, but in Colima, Tejuino is served over shaved ice and lots of lime juice.

another option for freezing it, if you don't have an ice cream maker, if you do have a stand mixer, buy some dry ice, crush it up, and use the paddle to churn it

Making the masa dough seems like an extra step. You really could just make a slurry with the masa flour and water to pour into the sugar water since the purpose of the masa is for thickening.

I did 2 1/2 cups water and 1 1/4 cup masa. Then mix, then add to you sugar water

I first had this in Ajijic in around 2001. It is an amazingly delicious drink. But it is fermented which means it has alcohol in it so I no longer drink it.

Do you have the Acholic recipe also? I am thinking rum or tequila would both work very well with this... might even try some coconut gin.

Or you can ferment it longer as alcohol is a byproduct of fermentation.

I Have got to make a version of this with the lime like fruit they have here in the Philippines... and I also want to make a version with rice flour and see how it works... I am excited to try this and introduce this to the locals here. Growing up in Texas I am shocked I have never had this... I have been making Horchata here and am about to also make Tamarindo also.

I made a full recipe and put it into two sterilized jars, with a cloth as a covering, and one developed a black mold, and the other a green. So would you have any advice to someone who has problems with mold and their tejuino ferment. I'm not aware of any forums where people discuss their tejuino fermentations, but I figured you might have an idea.

You must’ve had other bacteria reach your batch, if anything from what I’ve asked to the people that make it to sell, they said don’t let it ferment for more than 2 days.

Ha. I just had this. We get road-side vendors here in San Jacinto, CA. My spouse, who is from Guadalajara, Jalisco, Mexico, saw one selling tejuino and got all excited. I'm el gringo, btw, so I have never heard of it. I enjoyed it. Definitely not as much as my spouse, but it was ok. Edit: Just got to the end. BTW, it's pronounced Tajin (Tah-heen).

no. This drink is fermented like a kombucha. It contains probiotics that are good for the body. If you let it ferment too long (1 week+) then it will begin to turn to alcohol.

Prehistoric tejuino was drank ceremonially, as it was fermented to the point of being alcoholic. No ice needed😉

The first 2 times i drank it was disgusting. Then3rd timd it was hot as fuck andnitnwas the only ice drink around. Its amazing what you'll enjoy drinking when there's nothing else.

Your mix doesnt really look like it fermented at all, there was no bloating, no bubbles of gas and it looked exactly the same

LOL. You can't apply the same principals of making sauerkraut to tejuino. This substance is unique because of how thick it is and because the fermentation happens very quickly (otherwise it would turn into alcohol) using natural flora the process will look different. You can use brown sugar but it will taste different.
