I wash my pineapple in a deep basin filled with baking soda and water let soak for 10 minutes and then hand wash.

Tepache is very forgiving and simple to make; just pineapple skin and core no need to dice it, water and piloncillo aka panela and that's it.

My only cautions would be; if for some reason you cannot filter within 2-3 days crack the lids to ease the pressure from fermentation so the jars do not break. Also sugar & water fermentation creates alcohol, so if you go past 2 days take this into consideration.

Great video. I would like to add that in Mexico we usually don t put Chiles on tepache. We use piloncillo, if you can find it in your latín store, give it a try, you'll love it. Important: this beverage is not for diabetics, please avoid it.

You can also plant the pineapple top and grow another pineapple plant. It will take about 2 years to grow a new pineapple. If you live in a cold climate, just bring it inside when it starts to get cold.

Great video, Mary. I use regular old refined cane sugar or brown sugar because I can't be bothered buying what I don't have. I also use plain tap water straight out of the tap, again because I can't be bothered. No problems caused by either in the fermenting. End result with spices is like street tepache. Edit- forgot to add - if you want a house plant, don't chop off the greens. Instead, give it a good strong twist off, strip a few leaves from the bottom to expose a leafless base of an inch or two. Doink it into potting soil in a handy pot and water it into the center of the plant. Easy. Hardy and not fussy.

I make tepache like you, the more sugar, the more it ferments and if you add a little left over of your last batch, it will ferment faster, I forget what it’s called, this process. It has to be mixed everyday and for me the more bubbles and foam the better, then I add a bit more sugar and a few pineapple pieces before refrigerating. The problem is then opening the bottle, sometimes it’ll gush like a rocket, which means it kept fermenting in the fridge with the added sugar and fruit. I love it. I make it with strawberries too but impatient me adds a wee bit of champagne yeast. Oh so good!

Thankfully I love eating pineapple. I just recently learned to eat it as part of any meal. Because of the bromeline that aids w digestion. Which decreases pills. A cancer patient taught me this. To maintain effervescence I use the wine bottle and cork. When you push the cork in, if you have filled the bottle all the way up near the top, when you push the cork in it pressurizes the bottle a little and there also is little air space into which to lose the effervescence

Question. It's awfully hard for me to trust the cleanliness of purchased produce. Do you wash or rinse off the pineapple before using? Is it ok to rinse it and let it air dry and sit for a couple of days to pick up the yeast and bacteria naturally occurring in the air? I am making this TODAY! So excited to taste it. If anyone is wondering, the pineapple corer/slicer from Aldi does a pretty good job. I used it, and ended up with a pineapple "shell" I could just go ahead and chop. It probably didn't get as close to the rind as many would like, but I've never been good at paring anything close to the rind/skin! One of my mother-in-law's gallon pickle jars has been out and waiting to be filled, so I used that. I will be starting the pineapple scrap vinegar once the tepache is done. Thank you Mary!!❤🍍🍍🍍

I made this just about an hour ago, and it’s in the gallon jar in my dark pantry. I’ve never made anything like this before, so I am really excited to see how it turns out and what it taste like. Can anyone tell me…if I find it doesn’t bubble much and I wanted to add the water kefir beads Mary mentions towards the end of the video, how would I do so? Can I wait until day 3 to see if my concoction needs a boost? And, if I added the water kefir beads, how many should I add? We use Piloncillo, this is when you would need to warm the Pilloncillo in water, but when I am out of it or can't find it, I use brown sugar.

I'd really like to try this because but I can't eat much sugar due to gut problems. Can I leave it out or greatly reduce it and still have this work? Thanks for the helpful video!

Fermenting uses up the sugar

The yeasts and good bacteria will gobble up the sugar so the beverage is actually quite tangy. Cutting back on the sugar would be an experiment but it's worth a try. Love, Mary

Could you put this in ice cube trays/bags and freeze it for an extended period of time? Just so you can keep it around for longer. Would the good properties stay that way or would you lose some of it?

That is a great plan! Yes, you can freeze it. It will lose the effervescence and a few of the probiotics will die off - but not all. And it will still be high in anti-inflammatory properties. Love, Mary

Does it need to be organic? I think organic pineapples are hard to find. I don't think I've ever seen an organic pineapple but I was just wondering?

I read cookbooks before the 1940's (when most foods from scratch and not so processed and frugality was a virtue...)this recipe is in my Alice Bradley Menu Cookbook. I knew it was tasty but didn't know about the health benefits but not surprised. BTW does anyone remember the "Pineapple diet" of the 80's? It was all about the bromalaid :)

Is the pineapple you used ripe because it still looks green. Can you use a yellow pineapple? Also is the sugar from a sweet pineapple enough or do you need the sugar too?
