Every time I see one of these videos featuring takoyaki, I am glad to know there is a Japanese restaurant around here that serves them. Not very common in the US. A little expensive compared to some other places around here, but so worth it. Also I now want a beer
The machine is a bit odd. Usually when adding oil to an egg yolk they begin to emulsify and really lighten up when blending. It looks like your mixture cracked. But this particular recipe also required egg whites, which probably would have been added for structure 🤔 Doesnt look like an error on your part though. Great video though. I'm in love with your scissors.

Can someone explain why the part that should be mayo but turned out split every time was then mixed with the beaten egg white which doesn't belong in mayonnaise at all? I think part of why I like this channel is because it makes me fall in love with my cheapo hand mixer over and over again.
It looked to me like when you made the mentai mayonnaise, it started to separate, as if the emulsion wasn't complete. Was that just my imagination, or is that a potential problem with this mayo maker?

He did it wrong. If you have a machine like that you don't need vinegar, and even if you wanted to add some, you only need a drop. Also he needed to add the oil as the yoke was being whipped. By adding the oil and further delaying by starting the timer added to the failure.

@@viceice did he? I'm pretty certain he probably followed the instructions on the machine. I was thinking along the same lines though. The yolk oil vinegar probably should have been blending at the same time and it did seem like a lot of vinegar for one egg.
