Just a suggestion try using a little of the lime juice on the meat, then sprinkle your dry rub then using your hammer and reseason same side repeat on second side. It really imbeds flavor. If you wanted zest lime instead of juice.

Glad you and Zach have been able to stay together. I know that sometimes it’s really tough when a laid back guy and a type A driven gal try and combine their lives. My GF is a physician and was a nationally ranked triathlete as well and it isn’t always easy to reach that equilibrium…..but it’s worth the effort. Happy Thanksgiving you guys! 🦃🥧🍗
