This had really good flavor but I ended up having to transfer the chicken separately to the oven in the end because the chicken wasn’t done and rice was getting too dry and hard if I cooked it anymore

I’m making this recipe today, however, I have boneless chicken breast, is that ok to use? I know I would get more flavor from the chicken thighs, but just using what I have. There's no substitute for coconut milk...especially cream..that's a no. .just leave it out...the coconut milk gives a certain taste to the rice nothing else can give..if you have coconut oil you could use some of that
