Here's a delicious recipe of Kerala Mutton Roast, where mutton is cooked and simmered in a spicy tomato onion gravy flavoured with curry leaves, cumin seeds and other garam masalas. Pair this up with rotis, dosas, appams and even rice.
ingredients
mutton-1kg
shallot-100gm
onion-2nos
green chilly -6nos
curryleaves
ginger-1pc
garlic-2balls
kashmeeri chillypowder-1 1/2sp
chillypowder-1sp
turmericpowder-1sp
pepper powder-1sp
coriander powder-1sp
garammasala -2sp
fennelseed powder-1/2sp
coconutoil-2tbsp
Clean the mutton and transfer it to the cooker. Add turmeric powder salt garam masala pepper powder coconut oil curryleaves and vinegar. mix it for 2 minutes. Transfer to cooker and cook till 2 whistles. Then set it aside.
Pour coconut oil in another pan. Add curryleaves ginger garlic paste. Saute it. Add shallot and saute. Add onion when color changes. Fry till maroon color. Add redchilly powder, Kashmiri chili powder, garam masala, fennelseed powder, turmeric powder and saute well. When it starts boiling, add the mutton and fry it.
