I wonder how the 1st recipe would turn out with mozzarella added to the ricotta?? I could see making the egg rollup recipe with chorizo ground up like a paste add mexican cheese & spices rolled up, then topped with salsa & jalapeños. I just don't think the brocoli egg mixture would work. I'd have to think what other veggie to add to the egg mix roll up.????
