No matter how old you are, how many years you have cooked, how many preserving or canning classes you have taught, how many seasons you have gardened, or even if you have a published cookbook, this young woman is a constant source of inspiration, motivation and delight!! This is my most favorite You Tube channel and I hope she is successful with it for many years to come. Her attitude is so refreshing. I watch every single episode!! Thank you Becky!! Definitely going to make that pesto pasta salad!

FYI I’ve become so addicted to your channel!! I’m a divorced, wheelchair user, empty nester that’s been going to Costco constantly and Thrive Market purchasing ingredients to make food from scratch. However, I’m in a one bedroom apartment with little storage space. Since my freezer is very full, I’m getting a 5 cu ft freezer for overflow. I’m still trying to decide I’m getting a kitchen island on wheels, stand up pantry, a tall 8 cube organizer, or a six cube on its side!!

You are so right - round is overrated. When I was a kid I would help mama cook. As is usual with Hispanic families we had an uncle living with us. At dinner he picks up a flour tortilla and tells me, “Wow it’s good, you gave me a geography lesson, this looks like the state of California.” He sure gobbled the entire country! 😊

Here is my pro tip, I worked in a bakery/deli for 19+ years and made pasta salad every other day, I changed it up with my different ones every other day for the month, and one trick I learned was to reserve a cup of the pasta liquid, never rinse the pasta with cold water for the same reason you wouldn't if it were for a red sauce (so it grabs the dressing), put the hot pasta in with your veggies They won't wilt or cook in any way as you stir it all together, that cools it down and helps distribute the veggie juices over the pasta, add the dressing you choose to use. As the pasta cools down it will become dryer, now slowly add in the reserved cooking water As it cools down the hot pasta absorbs the veggie's liquid, and the dressing much like pasta finishes cooking in the sauce, taking in the flavors. Pasta salad is very much the same way so make your salad on the wet side so the pasta can absorb the flavors and if needed use the cooking liquid to help. Final adjustments can be done when it is cold from the fridge and it won't take much more with practice. I made a pesto, sundried tomato pasta salad that sold out every single time and that is what I did. They still use the same recipe there but it is not the same seller it was when I made it. The technique is more than a list of ingredients in a recipe. The difference was in the creamier dressing mine had because the pasta took on the pesto flavor and the added starchy, salty liquid made the "dressing" creamier because of the oils and nuts in the pesto. Give it a try, it works the same way with a ranch type, an Italian style, parmigiana cheese, and garlic style. The varieties are as endless as there are cheeses, meats, herbs, and dressings (dry powdered or premade). Flavor the noodle and the rest will knock your socks off! I hope I helped and encouraged more flair over pasta salads because any green salad combination you can think of will make a wonderful pasta dish just skip the lettuce for pasta. Ever thought about a Rubin sandwich as a pasta salad? What about cheeseburger pasta salad? Why not? McCormick Monterey chicken seasoning mixed with mayo makes a killer pasta dressing. It was one of my signature salads.

For pasta salads, the best thing to do is since the pasta is done boiling, drain and spread thin on a cookie sheet to cool all the way. They way, the starch stays on the pasta and makes the salad creamy and silky.

Hi, roll your tortilla sections into balls. Rolling pin should be in one direction an slowly quarter turn, that helps keep it round. My mom showed me this. Have a great day !

Morning Becky. I’m not finished watching yet but as you’re cutting up your cherry tomatoes I thought I’d share a little ‘chefs trick’. This will work especially well with your new knives; place a good handful of the tomatoes on a flat surface and flat plate on top of the tomatoes(a side plate works well). Hold one hand flat on the plate to keep still, and horizontally slide your knife through the tomatoes, you’ll find that you’ve cut them all in half, equally. Repeat until you’re all done. 👍❤ I’ll finish the video now, hope this helps.😄🇨🇦😄

It works really well with 2 of the lids for the glad storage containers. Just turn one upside down so there's an edge to catch tomatoes, then place the other in the opposite direction so they look enclosed. Placing hand on top of the top lid, slice horizontally through the tomatoes. Even cut all the way across.

I enjoy all videos. But it’s nice when in chronological order. Also, some dialogue is repetitive in videos which can be frustrating for the viewer. Why say homegrown and home canned in same sentence? It’s assumed you canned.

the first time you made tortillas i looked at the recipe and its actually the one i use, its perfect! i know what helps me get them round is once i mix the dough i portion them out and then make them into balls then flatten them a bit and let them sit a bit before i roll them.

Hi Becky, I really enjoy your videos on meal ideas. I make naan bread for my husband and I, also for my daughters and neighbour. There is nothing like homemade food, I receive your videos in the evening here in the UK and really enjoy them. You have such huge freezers, fridges and cookers (ovens) in the United States unlike us. Having said that we can still attempt to achieve results in our own kitchens. Like you if I make 1 meal I double up and freeze when possible. It just makes sense and can save money. Thank you once again you are such an inspiration! 😊

FYI- 2 plates, one upside down, cherry/grape tomatoes, Mozz balls, olives, grapes, etc. on the circle. Top with other plate(right side up) Hold upper plate down and Cut straight through whatever is between the plates. Also try pistachio nuts in pesto, it's amazing.

Last year my husband told me to pick any kind of corn to grow. He of course grabs the bread and butter corn like always and i wanted something different, preferably something that didn't take as long to harvest. After looking through my options, i decided on a corn called peaches and cream. OMG, SOOOOO GOOD! Yes it harvest a month sooner and yes it cost quite a bit more, but dang it was good. ❤

I’ve never made or seen waffles as french toast before, however probably 75% of the time I choose croissants over bread because you can do so many different variations! Our favorite is stuffed with a strawberry/cream cheese filling & it’s divine. Thanks for the wonderful recipes, have a wonderful & blessed week!

If anyone has high blood pressure or heart disease…I would skip all the salt that is added to the pasta water and the corn salsa ingredients….because 1 teaspoon of table salt has 2300mg of sodium, which is the daily limit /recommendations for healthy individuals. Anyone with high blood pressure or heart disease should have closer to 1500 to 1800. the salsa would have good flavor without it because it has a lot of flavor from the onions…once you get used to not having salt, you don’t really miss it

My grandma makes the best homemade tortillas (She’s a Texan Mexican)! She uses either crisco (there is a health substitute for that) or even coconut oil and her tortillas are always the best!

Sometimes I will make a batch of cinnamon rolls and instead of baking in the oven I will slightly flatten them with my rolling pin and cook them in my waffle iron. My kids love this on “breakfast for dinner” nights. We drizzle with a quick royal icing or syrup. I’ll have to try adding waffle French toast in the rotation to see how it goes!

I'm loving all these videos! Try shredding a granny Smith and a Fuji apple and adding it to your waffle batter. It's so good. Some black beans would be great in your corn salsa as well.

Hi Becky, I freeze my homemade flour tortillas and put a parchment paper between each one in a gallon size freezer bag. Then I take out what a need and cook them, and they taste delicious no issues. No freezer burn either.

You can use ANY bread type things in French toast, as long as they are fry or stale enough to absorb the egg batter. Fresh is usually moist and doesn’t pick up the flavor. Try French toast with hot dog buns; my kids like them better than regular bread.

My ex mother in law was Hispanic and when I was in my early twenties she was teaching me how to cook Mexican food. She showed me how to make tortillas. Mine looked like pita bread and the state of Texas. She always had a towel that she would press the top of the tortilla with. She would press it on the top into the hot cast iron skillet. We then would put some butter on them. They were delicious, no matter what shape they were. I learned some amazing things from her in the kitchen.

Everyone yes Becky has heard of tortilla presses. She even owns one, though I'm sure the trek to locate it was just too much, since she's soooo busy. I'm sure we'll see another one next year when she decides to make tortillas again

My husband’s family are Italian so over the last 40 years I learned quite a lot about Italian cooking, still much more to learn! Anyhow pasta shapes are specific to particular dishes. However the everyday rule of thumb is that pasta which has ridges will hold a sauce better. Most important of all don’t rinse your pasta once it’s cooked and never put oil in the water when boiling pasta, the sauce will never cling to the pasta - sacrilege!

We are taking a trip north for 4 days for my FIL to see and my MIL's internment place. When we get back I want to prep meals for the rest of the summer so when we get busy lunch and dinners are easy and quick. Love that you share your recipes for doing that. I want to make my homemade pesto and can that too. The tomato plants we planted all look great this morning. We have 4 baby tomatoes on our plants. Rain is on it's way and forecasted up to 5 inches by next Monday. Brioche bread makes the best french toast. Taking a break this morning as this old girl is tired from planting yesterday.

You can’t can pesto because of the oil, but you can freeze it, especially with an extra bit of oil on the top to prevent oxidation.

We love waffles here. My grandmother taught us to separate the eggs for waffles. Beat the whites to a stiff peak. After the rest if the batter is mixed, fold in the egg whites, then cook as usual. The resulting waffles are light and flaky. My teen granddaughter watched this episode with me and promptly made a snack if a couple if frozen waffles, thawed and cooked like French toast . Topped with strawberry jam we made earlier today, she give it a thumbs up.

I haven't seen or heard complains. I don't know why there would be. I live in Bremerton.The weather has been all over the place these last weeks. Better than last year though where it rained and rained and rained. I will say I am so excited for and looking forward to your raised bed planting - when they come out. Hi Becky. In my country tortilla wraps are very expensive so I make my own (not round because I'm not that good 😊) but I always make a big batch and cook them about 30 seconds each side, let them cool and then wrap them well with cling wrap and put them in the freezer. Then when needed I just pop them in a dry hot pan and heat up from frozen and they work great 👍

I have been mixing your pumpkin and whole wheat waffles for my friend for post partum snacks. She loves them. I made a double batch today for her. Thanks for sharing your recipes. Near the end, one waffle maker died, so we put some in the oven in muffin pans, worked well too.

Becky I make tortillas every day for the last 50 yrs I have found that warm water works better and also when the dough is softer the tortillas come out softer, it’s just like bread if the dough is softer the bread comes out softer. Yes you can make tortillas with oil, traditionally they are made with lard and they do have a very wonderful flavor, but for some people oil works out better. Just like pie crust. Love your cooking thank you for sharing. We always learn from one another.

You can make a buttermilk sub with whole milk and white vinegar. This is especially good for biscuits.

Best homemade tortillas de harina (flour tortillas) is 3 cups of all purpose flour, 1/2 teaspoon baking powder, 1/2 teaspoon salt, mix together then add 1/4 cup oil (not extra virgin olive oil) 1 cup buttermilk (best 1 cup milk and 1 whole lemon juice letting it rest 10 minutes, I tried different forms my family likes it more when I do them like this, they don’t know what I add but the flavor is what they like). Kneed the dough and cover with Saran Wrap for 15 minutes. Roll into balls, sprinkle some flour over them and cover with Saran Wrap and a towel that is rinsed with hot water for 10 minutes. Finally roll the balls turning them over after each roll this will keep the round shape. Cook over medium heat turning over after 30 seconds then after 1 minute turn one final time and they will rise cooking the inside. Please give them a try and let me know what you think, you will never go back to using water.

i learned how to make tortillas in mexico and the trick was they used a tortilla press. it made perfectly round and thin tortillas every time! but if you don’t want to get one of those, you need to take sections of the dough and roll it into balls. then flatten it with the palm of your hand. from there it’s easy to roll out!

Frozen peas are the “secret”, perfect addition to salads, soups, even jello deserts. 😋tortilla dough is being overworked. 55 years of making tortillas under my belt. It is a delicacy bread. 😋😋😋😋😍😍

I would highly recommend trying sheetpan pancakes for bulk breakfast prep. I've been doing this for months and will never make pancakes any other way. I love the endless options too. I've made applesauce, lemon blueberry, chocolate cheesecake, apple butter, and pb & j pancakes!

The amount of pepper she put in the lasagna in the last video was crazy, like a 1/4 of a cup of pepper. I would think it would be overwhelming. I’m also surprised josh doesn’t notice.

I remember the tortilla ball in a bowl on my grandmother's counter. After it rested she pulled off a ball dough and started rolling and slapping it back and forth. Brings back so many memories. Enjoy your videos. Oh and when you reheat the tortilla just heat on a low open flame.

A tortilla press is only used for corn tortillas. Flour tortillas are always rolled.

They make larger presses specifically for flour tortillas. I have 1 of each size. Roll then press for uniformity if you want to roll them. And you need a bolilllo (small rolling pin w/o handles, shorter than french rolling pin) if you want to roll them, it works better.
