I don't think people realize that Kimchi is vastly different depending on how long it was aged, what veggie was used, and how it was prepared. The cabbage kimchi is most likely a longer fermented kimchi so it would have a very sour, pickled tasted, the radish kimchi would have a mild kimchi taste with a crunchy texture, the fresh kimchi would have an almost sweet spicy flavor, and the kimchi soup has a very well developed kimchi flavor.

Korean meals most often have an element of spice, due to kimchi being the most popular side dish and gochujang and gochugaru (hot pepper paste and hot pepper flakes) being very popular seasoning or preserving ingredients. The color is vibrant but not all of it is very spicy, they offer these ingredients in different levels of heat. So even if it's bright red, it's not always very spicy.

The reason our food tastes so remarkable is because we put mashes up garlic (다진마늘) in basically everything, since it makes everything so savory and wraps it up nicely. Even as a Korean I hate raw garlic but I have no problem eating foods that contain mashed up garlic because it's literally not even visible and doesn't even taste like raw garlic.
