Passata is a fundamental ingredient, a staple in hundreds of recipes, and is more than just a sauce; it's a burst of summer in every spoonful, allowing you to enjoy great-tasting tomatoes even when they aren’t in season. And with so many options available on the market, our BlindFolded PASSATA Taste Test explores which brand truly delivers the best flavor. Join me as we blind taste test our way through the supermarket shelves. We're on a quest to discover which passatas deliver the vibrant, fresh flavor of real tomatoes, and which fall short, tasting more like they're processed. Are you ready to transform your cooking with the right passata?
Watch the video as I taste test a variety, not knowing which brand they are until the end. Find it on KZbin or continue reading this article and discover the best sauce to complement your pasta.

Reconstituted does not mean re-used. It means water or some other liquid was use to rehydrate something that was dried. You normally see it when dried mushrooms are soaked in warm water to soften them up or when dried chiles are soaked in hot water before turning them into some sort of sauce in Spanish\Mexican cooking. Those tomatoes were dried.

3:06 It is quite worrisome to have a jar of sauce that had not yet been opened and see mold on it ! This can usually happen when a jar has been open for a while, but not when a jar taken from the supermarket had not yet been opened. Unless, as can also happen, someone in the supermarket had already opened the cap, air entered, and therefore lost the vacuum. I personally noticed a few times in supermarkets, in testing the cap by pressing on it with my finger to see if it was still vacuum-sealed and had not already been opened by someone. Which always worth doing when you take jars like that (sauces, jams or whatever). PS: In some cases, of course, a factory defect cannot also be excluded, but in most cases the cap has been opened by someone.

@@aris1956it can also happen during the bottling process, when the sauce drips onto the collar of the jar and isn’t wiped clean before being capped, which happens more regularly than you think, but is normally picked up with quality control checks, this one obviously snuck through. It’s more likely than someone having opened it in the store.

Personally, I always buy Mutti. The quality is consistent, and if tomatoes are the star of the dish, the tomatoes must be of good quality. Fresh tomatoes are no good if they are out of season, and tastes like cardboard. This is also why Italians make passata, and can tomatoes. They preserve them for when the tomatoes are not in season to get good results in cooking.

Guys please be aware that as soon as entire mold-cultures start becoming visible the actual mycelium and spores have penetrated far deeper. For hard cheeses you can cut off a chunk about twice the size/depth of the mold-penetration but as soon as starts showing in cottage/fresh cheese, runny sauces like in this case the passata, or stuff like jam, watery fruits and vegetables, once you see it the spores have essentially infested the whole thing. It's not like it will kill you if you scrape off the moldy part and eat the rest but over the long-term you are needlessly assuming toxins that might cause harm down the line.

I've been trying to find passatas here. I've seen tetra pak 500 and 750 grams of Pomi at an organic store and a 650 grams bottle of Mutti online, but the price tags are a kick in the budget butt. Been using Coppola (from Salerno as the packaging says) as they're a tad affordable (converted to around AUD 2.13 to 2.15). Huge difference in flavor on bolognese cooking, way better than using tomato sauce with additives. Thank you for making me discover and reigniting a preference of cooking from scratch than from a packet or jar.

there are 3 important criteria in passata, one is the brix rating which will give you an idea of the quantity of sugars present in tomato passato (juice, sauce, puree) the other one is whether the passata was obtained by actually sieving tomatoes ( and by the way what are some of the " passata" in the video doing with seeds? if the tomatoes are crushed first the term passata means they are saved ) or if the passata is made by diluting puree (much cheaper but easily high content of sugars). The other one, mentioned is the acidity. A VERY important thing is that in some areas of Italy (namely Naples) people like a more acidic tomato passata (or any other product) which may account for the Cirio passata being more acidic. Generally speaking tomato product producers cater different products for different markets. Ideally one would als know the TYPE of tomatoes used. Pomodorinii, for example, give a naturally sweeter sauce (but is sweet always better?). In case anyone wonders 1) I am Neapolitan 2) I have worked in the food industry

I finally found this exactly same bottle of Mutti passata where I live. Hella expensive, double the amount I'd pay for a national bottle, but it was very, very good. Super sweet, nowhere near as acid compared to the ones I use. Now I understand why Italians highly dislike the use of sugar. If the tomato is good, there's no need. It was a good experience and I'm gonna buy from time to time, but it's not very affordable.

I have been buying mutti from my local iga for a while now and find it quite tasty! Just curious if you gave the jars a good shake first? This could make a difference with the taste of the regulators if they have settled at all.

That's great to hear you're enjoying Mutti from your local IGA! It's a good tip to give the jars a shake before using them. This can help distribute any settled contents and ensure you get the best flavor from the product. Thanks for the suggestion and happy cooking with Mutti!

Here in the UK we are drowned in cheap supermarket tomatoes, plus mostly big brands like Napolina (which are no better, just twice the price!) I found Mutti some years ago now, and it's my go-to for any tomato product. It's usually available on one online supermarket or another, and mostly at a really good price or on a deal. If not available, I might buy Cirio, but more often than not I'll just forgo making that sauce that night.

@@vincenzosplate I've not come across Leggo's and Coles (being in the UK), but I have had Divella products before, and I think you've got the relative scoring on point vs Mutti. Of the others I recognise a couple, but haven't tried them. I'm a bit surprised that Cirio scored so low, but I've only ever used their whole canned tomatoes, and we all know chopped or passata can be made out of the less nice tomatoes than the whole ones. I've stuck by Mutti for ~5 years now, and friends are always impressed if I make a simple tomato sauce, and many have converted to Mutti as well. I've got to mention DeCecco pasta - I do sometimes buy better or more artisan pasta, like Monograno, Molisana etc, but DeCecco is such good bang for the buck - usually no more than Napolina, which is pretty foul.... Again, I've converted many, many friends away from rubbish pasta brands in favour of DeCecco.. Some good extra virgin olive oil, an anchovy or two, some chilli, plus the winning combo of Mutti and DeCecco always makes for a delicious, digestible meal.

Where did you read that taste is something "objective" ?? It has always been said, and not only by us in Italy, but also in the rest of the world (maybe in your country things will be different) that taste is something personal, it is something subjective. If you like something, it doesn't mean I like it too. And this obviously also applies vice versa.

The acid is probably added to them in some calculated manner to compensate for the ph of whatever the puree is so they can can the tomatoes and ensure safety. IDK if these factories employ pressure canning so it would make sense if they did not to get the ph in a safe space.

I guess one issue you might experience with these kind of taste tests is some of these may not maintain the same consistency. Supermarket brands in particular are prone to this as they can change manufacturers and also most of them have targets to reduce fat, salt and sugar as well as minimising allergens/may contains which can result in recipe change.

I once tried Divella and was very disappointed. When looking for another brand I came across the Turkish Rio Santo or Yonca. This brand is so much better than the Divella. Only tomatoes and salt. Taste sweet and fresh. If you can find it and try it, I would be very interested in finding out where you can place this sauce on your list. They produce both passata and chunky. Both are very good. When I am out of canned Mutti I often go to the Rio Santo on my pizzas. I am never going back to Divella the way this tastes now. To me it's like bad ketchup. Keep up the blind tastes. Very interesting and fun to watch.
