@Merciless Freak 'Bland' can be said of food from other cultures too (probably yours, as well even if not in totality) but to say that Italians are "crybabies" isn't right. I'm not Italian but as a well-travelled individual? I appreciate good company, History & respect the local culture. When you're cultured enough, you will understand that food isn't just for gobbling down. It has it's History, techniques & identity. Respecting other cultures is proof of how cultured our own self actually is. And I can understand why Italians are upset - *people ruin their Historical cuisines* & claim to be able to do it better. That is just pure arrogance. It's actually a blessing that the likes of Vincenzo are educating us on what is authentic Italian cuisine from imitations, especially Americanised "fusion" crap made like a child born out of wedlock - without care, dedication & origin. No, thanks. I'll have what Italians are having. Respect other people's cultures in order to have yours respected. Period.

Here are some rules of Italian cuisine that all should know: - Pineapple *does not* go on pizza - Cream is not used in carbonara - Chicken does not go with arrabbiata - Cheese does not go on any dish containing fish or seafood - Spaghetti is eaten using a fork, never a spoon, and should never be cut up Italians are very proud of their cuisine and don't like to see the commission of food crimes.

Very interesting. Being from Uzbekistan, the country on a Silk Road where rich Italians were buying silk from China and caravans were passing Samarkand etc I think we have influence of Italian food as well. And we also had differed "kingdoms" or khans like Bukhara Emir, kokand khans etc which merge now to one country Uzbekistan with different dialect traditions and food. Thank you

I am in St Louis Missouri US. There is an area of town here called "the Hill" (small hill there)..It was the Italian neighborhoods of St Louis. There are some great restaurants there. The majority of them are Sicilian or South Italy cooking...but..There is Zia's who cook things like the North. I have visited only north Italy..Genoa...and Venezia,Udine. and just between those regions, there is difference in foods. Friuli region..wild game(meat)..polenta..more cream based sauces.. In St Louis, we also have a large Greek Orthodox church that has annual festival with authentic food. Also St Louis has many newer immigrants from African nations and restaurants as well. I love learning about the many cultures through their food..(the best way). The best thing about "Italian food" is that it is FRESH.

One of my grandmothers was from San Gimignano (Tuscany), my other grandmother was from Filadelfia (Calabria). The food they cooked was very different. Growing up in America, I got to experience very different Italian food depending whose house we ate at when we visited my grandparents.

There is a restaurant in my part of America that you would enjoy, they offer a “tour of Italy” dinner where they make a very small menu featuring several courses of food, each from a different region of Italy. Although I believe the chef is from Calabria.

Even avg height is very different. Very short in the south, very tall in the north (7 footers). It's basically larger than the euro zone and unified as one country. It's massive and ancient

@@vincenzosplate - I am still tweaking the recipe. But it is a standard pizza dough which I let rise on the pan for an hour or more. Does not become as thick as traditional Focaccia, but the family likes it that way for being less bready. Both the dough and pan have garlic olive oil. So it is not a dry cook. Drain the canned tomatoes and pre-crush a little to remove the liquid. Then you can rinse some of the seeds away. Hand crush (with a glove) the tomatoes from the can. Season with salt, ground pepper corn, ground red pepper (go easy) and top with oregano, thyme, rosemary and little more garlic oil. Top with thinly sliced onions and a little more salt. 350F for 22 minutes. The bottom is incredibly crispy and the top is still soft. You can hear the crisp when you cut it. I know, I know. You are hungry now.

Longer version for those interested of why I'm right and he's wrong (a bit mean but still true) : Italian cuisine did not influence western cuisine and especialy not the french one to the extent he suggests. Every culture tends to influence its neighboors and Europe in this regard is really diverse yet dense and old so it's more the case than say North America. BUT, I believe he's specifically refering to "The Italian myth in French cuisine" (see Wikipedia for this), in which Catherine de Medici supposedly brought "superior" italian cooking to the french court. This myth is indeed not true : it comes from some edgy 19th century french writers simping for anything from the newly unified peninsula. There is no historical record of italian chefs during Henry II (and thus Cath "the Medicine") reign, nor does french food undergo any visible change after the Italian queen stay (and trust the french, especially the royal court, to thoroughly record all this). As for why it can be argued that french cuisine influenced the italian one, it's mostly down to 2 factors : -France being the central empire in Europe for most of the late Middle-Ages (but also high M-A), thus spreading its elites culture more, and also acting as a bridge between northern, southern, and western Europe (I mean all the famous Western european countries like the UK, Spain, Italy, Germany and their medieval counterparts all connect through France) ; -French chefs standardising and writing down their technics way before the italian ones (way before Italy was unified actually). They made the first modern cooking books, with fancy pictures of the dishs and all, and created a system (the legos of food) for cooking with french ingredients that could then be applied to european or international ingredients, which is why french cuisine is easily incorporated into other cooking traditions (see vietnamese cuisine for instance) and is the basis of almost all modern fine restaurants around the world (including italian ones). That really doesn't make it "better" than italian cuisine, which has amazing traits but is often confused with italian-american cuisine which is mostly famous thanks to the US soft-power. Anything going viral in NY is sure the become hyped in most major cities around the world in a matter of weeks. Even croissants were made americans (NY rolls) and are coming back to Paris, only now they're sold for like 5 euros :/ (btw they're just basically chocolat filled kouign-amann, which is just an over the top fatty -sweet threat to your liver). Sorry for the typos and mistakes that my french a$$ surely spinkled all over this really big english book I ended up writing !!

Non sono per niente d'accordo: il valdostano ha delle caratteristiche leggermente differenti in quanto terra di confine e il siciliano in quanto isola, ma tutti gli altri italiani che stanno in mezzo non sono esseri completamente differenti, ci sono caratteristiche territoriali (da preservare), ma hanno molte caratteristiche comuni. Chi non se ne accorge non ha una visione completa, ma molto stereotipata.

I’m Argentina we have dish called “milanesa napolitana” . I was so confused while growing up until I learned it is Argentinian-it all makes sense Argentina in the late 19th century was a melting pot of Italians from many regions. (It is similar to chicken parm, but with veal. Super comforting, super calorific)

Ricordo ancora che nel primo anno, quando sono appena arrivata in Italia per la prima volta, mi mancavano tante cose... la casa, il lavoro, i miei genitori, i miei fratelli & miei amici. E mi mancavano anche molti piatti, verdure e spezie del mio paese. Durante del periodo che sono andata in centro per studiare l'italiano, sapevamo che mi sono rimasta incinta. A quel tempo, desideravo più cibo vietnamita che mai. Soltanto ho mangiato solo pane, i cracker, la focaccia e la pizza ogni giorno, ma poi vomitavo tutto. Dopo circa 3 mesi di gravidanza, quelli che ho mangiato erano deliziosi italiani. Mio marito è italiano, Milanese e non sa cucinare nulla. Così ho imparato da sola a cucinare piatti Italiani. Dal risotto al porcini o zafferano che preferisco sempre, tutti i tipi di ragù per pasta, spaghetti, primo secondo. Mio marito, miei figli, gli amici qui adorano il cibo che cucino. Ecco perché mi sono molto divertita. Cucino per emozione, non per misurare, ma solo guardo con gli occhi e sento con la mano. Sono passati più di 8 anni che sto qui, cucino di più la cucina Italiana durante settimana che la cucina Vietnamita. Se dovessi tornare in Vietnam anche solo 2 settimane, mi mancheranno i piatti italiani. In effetti, nel mio cuore, c'è un posto enorme per l'amore culinario di questo paese a forma di stivale. 🌈🍀❤🍀🌈

I am also someone who shares a passion for italian cuisine. So ive gone to lengths to get the recipes from my grandmother on her spaghetti, which is unlike anything here in america. They dont understand subtly and balance. But its time i start working out how she made it and share.... From my experience Italians from the south are more warm, always smiling, not afraid to come and talk to you. People from the north of Italy are not that different from where I live in France. At least that’s my experience. People in Milan are totally a different thing though 😅 I went there twice and they look at you very strangely, as if you come from another planet.

I understand what you're saying, but there are the basic Italian things. I went to culinary school in Italy. They taught us foods from around the country. Also, I tried pizza in sorrento and it definitely wasn't as good as some I had in the Marche region. I've met some Italians that used a spoon and fork didn't care. I was taught that the north uses more butter and the south more olive oil (not saying they both dont use them)

I am a fan of Italian food and I recall that the real Italian food is not like the stuff that's served at Olive Garden. I always enjoy making the real Italian dishes better than the stuff served at Olive Garden or any other Italian Restaurant that might not serve the real Italian food.

Hi Bradley, you're right. Italian food is really different than restaurants that want to remake real Italian recipes. But you can eat the authentic Italian food only in Italy🇮🇹

@@vincenzosplate Vincenzo, My grandparents were from Italy. My surname is from Benevento and my mothers family is from Partanna, Sicilia. The cooking is different and as you correctly stated Italy was not a country until the unification under Garibaldi. Ciao from Connecticut, USA

I am a chef and the true is that majority of people have no idea of traditional real Italian food very sad!! Food is the one most important thing that brings a Italian family together this is where I got my passion for food . I can’t wait to go back home-too Sicily miss my parents.

let's not forget NEVER. EVER. put olive oil in the pasta water 1, you'll waste it 2, sure it may make the pasta stop sticking, but there are other ways to stop it sticking

There are many Italys, and many different Italian dishes. All good. Then there is Americanized Italian food. In Italy you often get a pizza with one topping. But if you want many toppings, eat a Supreme pizza in the US.

btw we have classic indonesian food influenced by italian during colonial era, which is fried pasta, basically mixed between western style and indonesian style. Probably italian will hate it 😂
