Mostarda 27:25 is not horseradish gelatin. It is fruit, in your case cherries but you can get pears, apricots, clementines, etc, candied in a syrup made with water, sugar, and spices (mustard and other spices). It is typical from Verona, around a couple of hours from Milan. Also Gorgonzola is not originally from Milan (although there's a town nearby named Gorgonzola) but of Novara, around an hour to the west. Good choices of restaurants. That risotto looked very good.

Not only as a home cook, but a professional cook. I enjoy the excitement mark brings to the table. I would cook for him anytime. That also was a gremolata (parsley, lemon zest, garlic, maybe s&p) put in the Osso Bucco.

Italian food is amazing, Simple yet diverse and full of flavours, color & texture. It's not just the food but also the Italian chefs who are usually interesting characters. I enjoyed Stanley Tucci's Searching for Italy which unfortunately did not continue after two seasons but this series looks very promising.

oh yeah, I live in italy since I was born, 32 years, and I've tried maybe 5% of the food. Every small town, every city and every area in a big city has its own typical food.

Good show. Hire the same woman again as a tour guide, she's the bomb. Future episodes could be a Spaghetti, Pizza, Cured Meats, Wine Region and Pasta making Tour's. Segway's could be the regional differences between Northern Italy & Southern Cuisines as well as the differences between Italian & Greek Spaghetti. You could also visit some of the real pizza making oven places. Olive oil production, Tomato growing, and more Bread baking would be some other thoughts. You are by no means finished with Italy.

Mostarda di cremona is fruits boiled and marinated and/or preserved in a concoction that contains mustardseeds and/or mustard oil. In this case they were probably actually a type of cherry that were used as the main ingredient for the mostarda.

The one with mustard has mortadella for the cold cut. You should have put cheese on the polenta with egg and truffle, that's why they gave you the grated cheese.

FYI those little mustard fruits you had with the gorgonzola are actually fruits, it is called Mostarda, usually tiny apples or quince which are flavored with a mustard oil.

Great video! In case someone hasn't already clarified it, the mostarda you had with the gorgonzola was a cherry. They are sort of candied in syrup with a touch of mustard essence.

Yes, they have a similar look, but gorgonzola is made with cow-milk, while roquefort - I think - with sheep-milk. The “gorgonzola piccante” is definitely more spicy and “strong”. I am milanese, I like both

Mostarda in Italy is similar to that of chutney, spicy, hot, sweet and salty. Made with various fruits and mustard essence. There is an interesting story about Gorgonzola; Mr. Andrea Bertazzoni, from Mantova, went to the USSR to sell the famous cheese, thought to be a traitor and a poisoner with that mold, that he risked to end in the Gulag for attempting to poison Stalin, he managed to escape and free himself and the cheese.
