These are some of the foods I grew up with. My mother was so accomplished that people approached her to set up their restaurant kitchens in Manhattan & Queens in the 1960's/1970's. Most of them were Italian but a few were Greek and a few more that were French. She did everything, Austro-Hungarian, German, Croatian, Belgian etc. She learned from families that migrated pre-WWII and could make anything at a moment's notice. I once listed how I was taught to do a red sauce to an Italian woman who just stared at me in shock. When I finished describing what I considered basic she responded with; "You're going to have to learn to cope with jealousy". Thank you for going back to New York and showing how the immigrants established the remarkable foods that are still made there today.

Hey Josh and Ollie, I appreciate all the work, fun, and collabs you do. I know this is a lot of hard work between you and your team, and one part is navigating sponsorships. I'm not sure what your process is for accepting sponsorships, but I request that you don't continue with a company that actively harms its clients. BetterHelp does not keep proper ethics of therapy/counseling, sells data promised to be private, and has not been helpful for friends who have tried them out. There are videos about them detailing this. I don't know if you'll see this comment at all, but I genuinely enjoy and care about your channels enough to say something.

Why are we held to standards of a single Italian chef? The Italian immigrants to places like USA, Canada, Argentina, Brazil, Uruguay, and many more countries have made amazing sub-cuisines, essentially Italian 'regional' cuisines. Great video. You guys had chemistry together that really works. I hope you can collab with Babish again in the future. I can't wait to see what Mr. Z thinks of this though. Since i haven't seen any body else mention it, to anyone thinking about using the sponsor Better Help, please don't. They were chased off the platform a while ago for using non licensed therapists, and while they've fixed that aspect now they sell users private health data in violation of things like HIPPA. They also just aren't a good service for most people. They bill themselves as a cheaper alternative to traditional therapy but actually often cost more. They can cost like 200 to 300 a month for biweekly appointments once you total all costs, while many traditional therapists will run around 150 a month or even less. Many therapists now offer telehealth visits as well, and will actually keep your private health information safe and aren't being sued for violating user privacy. If it's all you have available it might be better than nothing in your case, but for most people it's a waste of money combined with a risk of your mental health information being available to third parties.
