Your nonna is exactly right about letting the dough relax. What happens is the water in the dough penetrates *into* the flour particles, instead of just surrounding them. You do that with bread, too. Your nonna has professional skills!! Thank her from us for sharing her know-how with us. Man, I love watching nonna cook... I just love your grandparents. They deserve that silver button! Who knew Nonna would have a successful career after all her kids were grown up? As for her machine, she knows best what works. Don't get in her way, just let her work her magic! So glad to see nonna looking healthy and energetic. ❤❤❤

Maybe white family's have this problem but not those from the Hispanic/Latin, Asian(Indians are included), Arabic, Persians, Native Americans, Hawaiians, Jewish, those that come from South Africa and also those that come from black majority islands do not have this issue they all get recipes passed down to them. It's very rare if they don't get recipes passed down and America is made up of immigrants after all so honestly end of day their is a disconnect in the white family which I am not shocked by after all they believe in kicking their kids out at 18, don't want their adult children living with them and so many issues so not getting recipes passed down doesn't surprise me the least..

I love when Nonna still uses Italian names for food. For parsley she used the Italian version. I am from Cyprus and I have been living in Turkey for 53 years, and I still call some food in the way that Turkish Cypriots call them❤❤❤❤

I have a similar pasta machine, it's not electric but with a hand crank. It was my mom's from the late 70's. LOVE IT. So easy instead of using a roller.

I cannot possibly express how much I enjoy your videos. Your Nonno and Nonna remind me so much of my own. And this recipe... takes me back to holiday dinners. Easter or Christmas would be when they would make homemade ravioli because they're so much work. They would do two types, ricotta and meat (pork and beef blend I think). Phenomenal... I just wish I could have learned more from them before they were gone. Thank you for sharing your wonderful grandparents with us.

My mom used to make ravioli. An all day job. But what a great dinner. She made meat ravoli. The meat in the ravioli were the size of golf balls, so I could about 6 before I was stuffed. There was a salad to go with it. Even we as kids would be allowed to have a small glass of wine to go with the ravioi. Mom and dad are gone now, but ohhh the memories.

From the very first picture I knew it would be delicious! Not only does homemade taste better, it looks better! I remember my grandmother and one aunt making it from scratch but my other two aunts never did. There used to be a Catholic church fairly close to my family that would occasionally have a fundraiser selling homemade ravioli and my parents would get some, a special treat. Since my mother wasn’t Italian, we never had homemade pasta at home, just what came in a box or frozen. So going to see my father’s family in New Jersey was always a special treat, real pasta, real gravy, and real sliced cheese, meats from the deli and real sub or sandwich rolls! Thank you for bringing back so many good memories from so long ago! 💕💕💕💕
