as Full Blooded Italian but born in states , nothing gets me more then what I call Italianish Dishes , meaning there not Italian of origin. The Greatest sin I seen witness and dislike is people who throw there Pasta against wall to see if its done . really wtf . Not every Dish here in US that served in US is Italian . If Restaurant serves Lobster Ravioli created by Marco Pierre White its not of Italian origin , thats Italianish . So people watch what some people call Italian food it might not be of Italian origin .

Once I was invited to Lunch at a family table and they talking Italian in a manner I thought they get a divorce in the next half hour, but they were just telling each other how their day was and how stupid all the other people at work are.

We thought we were, but we really were not ready to see him turn balonese into Chicken Ragety but better known to everyone else as just chicken spaghetti. It's like watching a great face turn into a trad-gedy, or watching a alternate F&F where Dom cheats on and abandons Letty. This isn't my best bars, but it's still better than the taste of the fake chicken in that abominety of a classic dish that's now turning into something that's worse than clear confetti.

The sad thing is it's an easy recipe so there's no reason to change it. The only thing is, if you try it, there's this stage where it's a nasty stew-like mess, and you might think it's ruined or not coming out for some reason, but actually if you just keep cooking it down (for several hours) then it comes together eventually.

My sister and her cousin took a 3-week tour of Europe in 1995. Their first week was in Itally, where they stayed in a guest house in Napoli. Their tour was enhanced when they listened to their hosts on where to eat, what to see, and the best ways to see the sights in Roma. One of my grandmothers is from Palermo the other is from Ragusa and the only time they ever agreed was cooking, both knew each others recipes and although they both had slight variations neither strayed far from each other, let someone enter that kitchen and try and "re imagine" traditional Sicilian or Italian recipes they would have pulled out knives and for the first time ever, joined the same team!

In tacid defense, Pancetta is NOT a commonly available product in US stores, the closest substitute would be pork belly, but that is missing pancetta's specific curing process and ingredients. However, most americans are not as familiar with standard pork belly as they are with bacon, so it gets the general substitute role in all pancetta/guanciale recipes even though the smoked aspect of bacon will likely affect the dish negatively.... or less "Authentic" as most Italians seem to see as the greater sin.

I always like watching Vincenzo's Plate for Italian recipes. I highly suggest checking him out if you are looking for a good Italian recipe. He has a good sense of humor as well.

Honestly , I'm not Italian. And I've never heard of bolognese . Also I've never had an authentic pasta sauce . But would love to try. But in my area of USA , I don't know of any legitimate authentic Italian restaurants. All this been said I found this video very entertaining.LOL

The cool thing is that Italian cuisine is actually really simple. It's other people who have to make it complicated with a lot of extra stuff, spices, herbs etc. The only problem in the U.S. is finding quality ingredients, but maybe you can find an Italian market for the stuff you really can't substitute (pecorino, parmigiano, guanciale and tomato passata)

@@JamesSavage-i7f It actually is very simple. The hardest recipes to master are those that require precise timing and/or perfect ratio of ingredients - this is not one of them. You can take things slow, and actually you should. Just find a decent tutorial on youtube, by an italian, not an impostor, watch it, buy ingredients, watch it again and try to follow it.

My grandmother was Sicilian and she added anchovies to all of her red sauces. They break down completely during the traditional 3-hour cooktime for the sauce, so all they add is a bit of Umami boost. You can get the same boost by replaceing the anchovies with MSG.
