I'm not Italian and I never had a pepper and egg sandwich at home as I was growing up. But, early in my work life, I had a co-worker whose dear Italian mom always sent him to work with an enormous pepper and egg sub. One particular day, we didn't have much time for lunch and there was nothing around, so he offers me half of his pepper and egg sub. I gratefully/politely accepted, but silently thought it would be underwhelming. God, was I wrong. There is something amazingly comforting and wonderful about Italian pepper and egg sandwiches. (When I met this lady years later, I couldn't help but kiss, hug, and thank her for the sandwiches. I live in a place where there aren't a lot of ethnic Italian eateries, so I don't find them much. This video makes me want to go to the kitchen and make one right now. Great video. Thanks for sharing.

@@paponeable A natural evolution,because maybe at one time,certain authentic Italian ingredients weren't available to the immigrants here,so they had to learn to improvise&make do! And then of course through the different generations things changed,maybe were watered down a little?. .But it's the Italian American experience..different to the European one of course,,but still valid and relevant!

@@jerryoshea3116 Hi Jerry. Frankly I disagree: italians emigrated all over, we had bilateral agreements with various Countries during those days. Argentina, Brasil, Germany, Switzerland, Austria, USA, New Zealand, Australia etc etc etc . We went all over. I wouldn't call it " natural evolution ", it didn't happen everywhere else! anywhere else and bare in mind that I travel truly all around the world for work..., Italians ( among them some of my families ancestors ) tried to keep their culinary traditions as italian as possible, they were even making at the beginning their food products that they couldn't find back then ( just think about little Italy and the mozzarella, prosciutto, salami, sousages, tomatoes in cans etc etc etc that they still makes nowadays... ), a natural " process " , which is not an evolution ..., would have been " some " changings throught generations due to obvious reasons. But in the USA we cannot talk of evolution, you did it with every kind of culinary traditions and not only. You won't find anywhere else recipies that claims to be italians when in Italy they never exixted! Fully invented over there with the italian sounding... And I do wonder why! Personally I do have some ideas on why that happened in the USA but obviosly they're only personal suggestions.

Over the years I have watched so many cooking shows on KZbin that I've lost count and at some point every one sort of melds into one big Food show. You...you bring me back to my upbringing . You take me to traditions I grew up with. My mother, her sisters my father..all amazing cooks. Everything you make has so much meaning to me its actually emotional . Peppers and eggs , took me on a journey I wish I could repeat. But alas the people I loved who nurtured me and cooked like this are all gone. Thank you for doing what you do. It means so much to those of us who see food as more than sustenance ..its so much more.

Growing up on Staten Island we would go to Cub Scout meetings at peoples houses (yeah they did that) one of the kids mother Mrs Barretta would make these for the group man did we devour them. The first time we tried them a couple of the kids swore they didn't like eggs but she said just try it. They liked eggs after that. We always looked forward to going to Paul's house from then on. We even learned how to make pasta from scratch. Real life skills!!!

This is not exclusive to the NY area. My 4'11" Sicilian mother used to make these for me and we lived in Chicago. She's been gone since I was 9 yrs. old....and when I start feeling sad thinking about her and my dad, I turn to this. It is my favorite comfort food of all time. As I grew older and had kids, I made this for them and now I make it for my grands. I'm sure she's watching over us and is happy I make these for everyone.

I discovered them in the Baltimore area. One of my favorite pizza places makes a very soft, crust. They use it to make pocket bread, with which they make their pepper egg sandwiches. The best!

Looking through your videos, this stands out for me. My Mom made these on Fridays. No meat back then. My Dad’s favorite. She used the Italian frying peppers or cubanelles. Only time she used green bell was for stuffed peppers. Mom used peppers, onions, eggs, fresh parsley and a ton of grated Romano cheese. OMG…. Such heaven. Every mom and pop pizzeria makes the 12 inch sandwich. My family is from Staten Island, moved to NJ in the 50s. With background in Calabria, Naples and Abruzzi, your cooking really takes me back to Sunday dinners, grandpa’s homemade wine and nanny’s pastas. They are all gone now. I live in the south east, not a cubanelle pepper in sight. I miss them and I miss being Italian. ❤️

Everything you make feels like home. Not everything is exact, but very close, and you acknowledge and respect those minor differences or preferences we all have. I love pepper and egg or asparagus and egg heroes. Growing up on Long Island, I didn't realize how unique the food I regularly enjoyed was. Many recipes are unique to where we grew up in NY/Long Island Italian households, but what great food we grew up with! And, I regularly make them and share them with my family passing down the recipes to this day. I'm working on a family cookbook. It just feels important to pass on the favorites. Of course growing up Italian, these sandwiches were in regular rotation, especially in the summer with peppers fresh from the garden. We used to have peppers and eggs for dinner sometimes, usually on Fridays due the the old catholic “no meat on Friday” rule. Potato and egg sandwiches too. I wouldn’t mind seeing a video on that.

Yeah; mine, too. That way, she could follow the oil drippings from the paper bag to make sure you got there! The only difference is, my Calabrese mother would put hot peppers in it, rather than the cherry peppers. BTW, you could walk down any street in south Philly and smell this being made.

I grew up 1200 miles from Brooklyn. Our city had a large Italian population, complete with restaurants, bakeries, and cafes. Hiddin away in an alley behind a movie theater was a little sandwich shop that served pickled peppers and egg sandwiches. I worked across the street and ate there frequently. I've never forgotten how good they were and even made them at home. I still remember how good they were - 50 yrs ago.

I’m not Italian, but I worked at a pizza shop where these we made these. We never added onions, but it’s something I’d definitely try. Personally, I don’t use/like bell pepper, but I do use a lot of cherry peppers. I’ll also use long hots if I have them. I use provolone, but long story short, it’s a great sandwich!

I didn’t eat eggs when I was younger. When I was at my first duty station in the Army, a seasoned NCO taught me to make Jalapeño Egg Sandwiches. That sandwich started me eating eggs and has become a favorite with everyone I’ve cooked for. A little different than this version but close enough to remind me how good those sandwiches were. I'm born and raised in South Carolina and I lived and worked in the Greater NYC/tri state area for almost twenty years - I knew Italian food before I moved there but truly became enamoured of the astonishingly wide variety of the preparations and styles from all over Italy as well as the classic Italian American dishes. A freshly made Pepper and Egg wedge (sorry - hoagie, grinder, sub, wedge - that's how it was first introduced to me) on incredible fresh baked bread with melty provolone and mozzarella, oozing olive oil - OMG. I remember walking into my local pizzeria (three doors down from my apartment building, a 1900 era three story walkup) and waiting to order something and this older Italian guy was standing there waiting and watching as his Pepper and Egg sandwich was being made. I noticed as the cook griddled the red and green peppers, toasted the bread and lovingly folded the giant egg omelette overflowing with cheese and peppers into the warm, fragrant bread and handed it to the customer who turned around, sat down at a formica table and proceeded to devour it between slurps of a double espresso. I had to order one after that and fell in love. To this day, aside from real NYC pizza and freshly made mozzarella, a Pepper and Egg wedge is the one thing I get the most nostalgic for. Thank you for taking me back in time. You rock, my friend!

I grew up in Brooklyn but I like the heat from the chile peppers with my eggs. I make mine with Fresno red chiles (medium hot ) Serrano chilies (hot), pablano/pasillo pepper (medium light heat is also known as a good steak pepper) and Habaneros (hot) It's so good with hot chiles and I top it with fire cracker hot sauce..lol You can also sauté with some shallots for additional umami. The bacon, ham & cheese on top is so good with chiles & eggs!

Love peper and eggs. Great recipe. I find add salt at the very end to eggs preserves the color a little better. They tend to turn a little greyish in my experiences if I add too early.

This one is 100%. This is how Mom made it. Same kind of peppers. It is not right if you use other peppers. I am not a big fan of the Cherry peppers, but a lot of people do add them. Sometimes I will add a few. Cherry peppers are not super spicey. More flavor than heat.

I drove for US Steel out of Newark, and spent a lot of time at the piers in Brooklyn, Bayonne, Newark, Elizabeth, and the North River piers in Manhattan. Every food truck on the piers had pepper and egg sandwiches on the menu. Same thing at the butter, egg, and cheese market on Washington St in lower Manhattan, so I know this recipe well. I just made it last night after hearing about it in The Soprano's Cookbook. Same recipe as yours, except they used parmigiana or romano cheese instead of mozzarella. Fantastico.

My paternal Nonna often made potato, pepper and egg frittata sandwiches or as we grew up calling them, frittata panini, in Italian. She pan fried thinly sliced potatoes with sweet and hot Italian peppers and whisked eggs, seasoned with Mediterranean sea salt and freshly ground black pepper in extra virgin olive oil. After frying, she finished it off in the oven so that the top, if still wet, was properly cooked. The last thing any self respecting Italian wants to bite into is wet frittata on a mushy panino. Then, on a freshly baked Italian long bun, she would layer the frittata and grate some parmigiano reggiano cheese. This panino is an Italian classic and one of the most flavourful sandwiches ever eaten! 🇮🇹🇨🇦

Takes me WAY back to Long Island in the early 70's when I'd pick up comic books at stationary store by LIRR then hit italian deli on walk home and get a pepper/egg/potato on a roll and a pepsi in glass bottle. I miss those days so much.

Dude, ur killing me. I grew up on LI. I didn't remember the peppers & egg at the beach till you just said it. Mom always made it and always chewing with sand in it. The things you miss. Gonna make it tomorrow. Cannot get the rolls here in Virginia though. Still a fav. Thanks for the memory. I miss the old times. Keep up the great channel.

Looks delicious. It's just missing out on the crucial extra flavor that toasting the bread adds. Not toasting bread first is like not searing or browning meat first, or not caramelizing onions first. 🙂

We ate lots of pepper and onion scrambled eggs. I grew up in Soviet era Slovakia. It was called lecho ( yes , I know other countries have dishes called lecho that consist of different ingredients, but for us , this was lecho ) . The peppers were sweet Hungarian yellow peppers and bread was served on the side, but I think a nice crusty roll would be delicious. My grandmother made this for us kids for a quick lunch or a light supper … Brings back nice memories. And now … I’m gonna go make some. 😋

There's an Italian deli outside of Philadelphia that puts the egg filling in dough and then bakes it. It is heaven!

ive lived in NY for 40 years and been to a lot of pizzerias and this video reminds me of seeing pepper and egg hero up on the menu boards of many of them, but i always thought weird/gross back then. Why would anyone want eggs at a pizzeria? Now i understand why. Thanks for the trip down memory lane. I'm kinda dying to try one now at a place that's been doing them for a generation or more on excellent rolls

And yet another godsend recipe coming from Sip and Feast. I was diagnosed with diabetes over 20 years ago, not a big fat fatty thou. I crash just as often as I run high. Anyway there are certain rules I need to follow about eating. 1) try and break the fast with protein. 2) if eating pasta or bread 🥖 eat with a protein. Gotta tell you eggs get yucky, but this is life changing. Thanks 🙏

Outside Chicago and the only time you can find them is during Lent. Also growing up my father use to make scrabbled eggs with green onions and green peppers but never made them into a sandwich except with toast.

This is a weekly rotation right now, we're obsessed with these sandwhiches. My elderly mil called them an eastern Sandwich, I didn't know these were common in pizzeria's in the city. For us it's a great way to get some protein and veg in mil's diet. She will never refuse to eat these sandwiches. (We usually skip the cheese but I never thought to toast them with the egg mixture already on the bread, and we generally just have them on sandwich bread so I can't wait to try them on buns using your method). Thanks!

Yep - came here to mention the same. In Chicago a lot of the Italian beef stands make it, given that their main item doesn’t fly on Lenten Fridays but you can use the same bread and peppers. You’ll also see giardiniera as a topping , which adds oil and heat. (Do I remember correctly that in NY, giardiniera is more of a vinegar pickle?)
