Thank you chef John. I made your chili today for a church fall activity. I didn't know that it was a chili cook off that was judged until I got there. It was my first time ever making chili but I trusted that it'd be good, because every other recipe of yours I've cooked has been awesome, and low and behold I won the chili cook off. Thank you for sharing your extensive experience and for making your recipes accessible for a novice in the kitchen who can't buy crazy premium ingredients and often times have make substitutions so I can cook with what's in the pantry. I really appreciate your little funny catch phrases because they give me permission to make the recipe my own and be the 'boss of my sauce'. Thanks and Aloha, Morgan

Funny how you guys criticize him on "chili don't have this..." "chili don't have that..." It's "Italian Sausage Chili" He never said this was an authentic Texas or even a common chili we might be familiar with. Sheesh.

I love to read through the comments of a cooking video on KZbin. There will always be a bunch of people with sticks up their butts acting up all offended because someone didn't cook according to their perception. Like all recipes are cut in stone, and like it's illegal or sacrilegious to change them according to your own tastes and preferences. Culinary is all about trying out different things and experimenting with different combinations of flavors, tastes and ingredients. Sure there are traditional recipes but even they changed in the course of history...

I made this chili last night and definitely can say it is the best chili that I have ever eaten. The Italian sausage (I used all hot sausage) really jumps out at you. Note: after the sausage has cooked a little, I used a potato masher instead of the wooden spoon to continue breaking up the sausage. This works very well. Enjoy!

Yes. Water dilutes the flavor. The extra oxygen from the carbonated beer helps tie the flavors together. Sometimes I use vegetable stock....NEVER water.

@@DR.VinnieBoomBatz I use red wine on my garlic bread with a mixture of butter, marscapone cheese and minced garlic. You have to brush the red wine on with a damp (not dripping) basting brush first...then you can add the butter, garlic and cheese mixture to the bread. It's fabulous!

To me that looks more like a stew than chilli. I'm from Houston, Texas and our chilli is a deep red color and Super thick. Rarely use beans and if we do its pinto. Even if you buy it from the store it will be super thick and tomato based. Which I love the acidic texture the tomatoes give. Especially when you pour the chilli on top of corn bread. Yum.

Texas folks are REALLY adamant about what "can" go into "real" chili. (Like REALLY REALLY adamant.) That's all I was saying. I stand with my original point: if it tastes good, that's all that matters. (Seriously, have you ever had bad homemade "chili" - whatever the iteration? It's all good, imo.)

Chef I just made this amazing chili! I was confused about recipe saying puree and video the said chopped tomatoes. I found puree at the grocer. I don't think it will make a difference. I used Elk Italian sausage. It was a sweet Italian. Omg best chili ever! This is making it in my permanent recipe file.

Pork and fennel. Red pepper flakes if you're doing hot, leave out for sweet.

You know it's funny. When I make my mild chili and take it somewhere it is always the first pot emptied. I always put hot sauce and chilli peppers beside it for those that prefer more spice but most people tell they like just as it is. Because it is not so hot for a change and they can really enjoy it.

I can tell I live in Buffalo, home of the US's second largest Italian heritage festivals. I knew which Italian sausage was which before Chef John said anything and knew cannellini would taste the best with it. My nana made white chili with turkey Italian sausage(yes, that's a thing) and cannellini beans and it was always wonderful. I don't think there's a time where hot Italian sausage isn't on hand. Its sort of like cheese here, added onto any number of interesting dishes(at least by my brother).

I tasted for salt and it was bland and the oregano too over powering. Then I added the bell peppers and the beans and the story changed. The sweetness of the bell peppers and the savoryness of the beans gave an incredible taste. The taste and seasoning gets a perfect 10. Perfectly balanced. Awesome recipe. Holy smokes.

Chili LOOK'D GOOD!!! The Texan's won't approve,#1 you put Beans in your Chili!!! I really can't say that Iv'e really ever had a BAD BOWL OF CHILI. Some I'd choose not to eat again,because of being either very bland bland(afraid of using spices) or OVER THE TOP SCREAMING HOT!!! I like it with or without beans or other stuff in it.I like It made with VARIOUS MEATS!!! I prefer my Chili Mild as far as pepper heat goes.

In Texas they have "red" chili which is tomato based, and "brown" chili, which isn't. Your chili looked good; I prefer mine red and a little thicker. Plus, do the peppers get cooked at just 30 minutes? Why not cook them into the sausage at the beginning?

Perfect timing I just made 10 Lbs of Italian sausage, although it's been 80 degrees here in Calif so not the best time for chili. And yes Chef, chili must have tomatoes maybe no beans but definitly tomatoes.

Good recipe, but instead of water you should use some vegetable stock. Water dilutes the flavors. I promise it will make all the difference.

When I want something like this and have no sausage on hand, I use ground beef and pile in the sausage spices from my extensive spice/herb cupboard. it works in a pinch

Italian sausage is high sodium. The sausage I buy has 570mg of sodium per link. Why in the world would you add all that salt on top of that? Wow.

I know this comment is a little bit late, but would this recipe work on a slow cooker as well? I’m thinking that I would cook the sausage first to get it minced and then just dump it along with the veggies and stock/water in the slow cooker? Thoughts?

I prefer to thin my chili with V-8 or bock beer, adds more flavor. Water tends to steal flavor.

I think the key here is that the cooking pot should be cold,when adding the sausage meat,otherwise the meat will be fried and loose most of it's juices.

I saw as a kid in the 60's a water hose hooked to a sauage stuffing machine pumping hudge amounts of water into the meat for stuffing the sauages. Sorry every time I see sauage water I get flashbacks
