If you have a #Sourdough #Starter you need to feed it quite often (I do it generally every day or two but you can do it every 4/6 days). In this video I am showing the entire Sourdough Feeding howto. Even though this is a summary of the process that I explain on my website.

The Sourdough you see in this video is the typical Italian Stiff Starter. The difference with a classic Sourdough starter is in its Hydration and also in how you store it.
While a standard Sourdough Starter is liquid and with an hydration of 100%, the Italian Style Stiff Sourdough has hydration between 40% and 50%. The one in the video is a Stiff Sourdough kept at 44% hydration.
There are multiple ways to store a Stiff Sourdough Starter. I am using to store my Sourdough creating a snail with it. For the full guide about the Stiff Sourdough Feeding you can check on my website: www.italianpizzasecrets.com/s...

Hello, nice video. I like it a lot. I am now trying to switch to solid sourdough for my breads and pizzas. I have a question: what is the blade cut that you make to the dough for? Is this essential? What is its purpose?
