The subjunctive is the mood of subjectivity: it allows expressing opinions, doubts, moods, desires and everything concerning the inner world.
Italian has 4 tenses: present, past, imperfect and past perfect.
THE PRESENT SUBJUNCTIVE
Let's see the present subjunctive of the verbs "essere" and "avere", which are fundamental because they act as auxiliaries to form the compound tenses of all the other verbs.
ESSERE AVERE
Che io sia
Che tu sia
Che lui/lei sia
Che noi siamo
Che voi siate
Che loro siano
Che io abbia
Che tu abbia
Che lui/lei abbia
Che noi abbiamo
Che voi abbiate
Che loro abbiano
N.B. In the subjunctive present:
we tend (like for the other tenses of the subjunctive) to learn the verbs with "che" in front of the persons to facilitate recognition / use (because in most cases the subjunctive is introduced by "che")
the verb of the three persons singular is the same (so we need to explicit the personal pronoun subject to avoid misunderstandings)
the verb of the first person plural is equal to that of the first plural person of the indicative present
the verb of the third person plural is equal to that of persons singular + "no"
first person plural and second person plural tend to be similar to each other but different from others
What happens to the other verbs? Just remove their endings of the infinitive (-ARE, -ERE, -IRE) and add those of the subjunctive present.
Example of a regular verb in -ARE:
MANGIARE
Che io mangi
Che tu mangi
Che lui/lei mangi
Che noi mangiamo
Che voi mangiate
Che loro mangino
Irregular verbs (both root and endings) in -ARE:

N.B. Verbs ending in -NERE in the subjunctive present (just like in the indicative present) take a G before the endings of the three persons singular and the 3 person plural !
Verbs in -IRE basically can follow either the conjugation of the verb "partire" or that of the verb "finire":

The SUBJUNCTIVE PAST is formed as follows:
Subjunctive present of the auxiliary (essere o avere) + Past participle of the verb

in Italian, each auxiliary uses itself to form compound tenses (essere is the auxiliary of essere, avere is the auxiliary of avere)
when you use the auxiliary "essere", you must agree the past participle to the gender and number of the subject!
