Dan made a quite clever word play with the latin term "Deus ex machina", which roughly translates to "God from the machine". It's essentially a plot device used to resolve seemingly impossible situations in an abrupt and unnatural manner. By saying that "We are the cogs in their machine", he's implying that the characters overpower the gods, and therefore decide their own fates. Such a perception is directly related to the notion of individualism.
