Judy here is an easy creamy tomatillo recipe for enchiladas . Boil tomatillos- 10ish Boil yellow onion - about a fourth Serranos - depends how spicy you want I would say 3 Blend and add cilantro and sour cream. (It can also be done with Mexican cream) Season with salt and pepper and table spoon of chicken bullion . Add mixture to sauce pan on low heat. Top enchiladas (heat up tortillas or lightly sauté each one in a pan with oil) and add mozzarella cheese on top! Throw in oven for about 10 mins 350 and voila!

Any salsas that you make, you can add a few table spoons to rice, soup or meats to bring it up to a different dimension. My mother is Dominican and she made sofrito to add in just about anything she cooked. It's also called Recaito or Mirepoix depending on the island.

Seeing the chilaquiles, Carla and you all talking about authentic Mexican food makes me miss my mom’s cooking so much I love Mexican food but I can’t cook it as good and authentic as my mom! It just doesn’t turn out as good. 🤣 I moved to Ecuador a year ago to be with my husband and I love it.🥰 Only I wish I could bring mom and her cooking! And yes the green tomatoes are amazing for Mexican salsa! My mom always has that and chili in stock.

Judy! The same thing happened with my son when he was Leah's age. Him and my husband we're playing on the Wii, and my husband accidentally whacked him in the face. I'm glad Leah is okay 😊

The first time we visited Seattle....years ago, we had a prime rib dinner at the space needle. It was a beautiful evening with amazing views as it slowly rotated 😍 ✨ ❤. It was great! Too bad it was closed and Carla didn't get to experience it! Next time you have to make sure she gets to experience it!❤
