Pardon my writing in English since I've lived in the US over 60 years. I like your style. I have to try this recipe. I have to admit that I would use very little oil because the pork belly has a lot of fat already. Also I might not be able to find the 3 kinds of bean paste sauce otherwise I will follow your method. My mom used to do something similar for our "fried bean sauce noodles". Thank you for sharing.
