This is how you sell a $30 Caesar. Interaction, constant motion, and explaining the ingredients and your rationale behind them. Top Marks! No anchovies, because I presume He read his guests.. feel free to add your thoughts.

I miss real table side service like this. Caesar salad, steak tartar, Bananas Foster and Crepes Suzette harken back to the days of classic fine dining. I would have loved to experience pressed duck in a French restaurant.

As soon as he said the base is egg red wine vinegar Tabasco and worcheshire I tuned out. It is an anchovy based dressing. I was a table side cook and made this dish.

Looks good, but wrong to call it a caesar salad, because it isn't. You added tabasco, no lime juice, etc
