He was around in a time where people didn’t quite appreciate the authentic taste so he got caught in the middle trying to bring traditional flavors to western pallets. A lot of his hybrid stuff was hit or miss even though he was a fantastic chef.

Before the days of Gordon Ramsay and bs food drama shows. It was this. The golden age. I owe these two chefs for what I know today for my knowledge and learning how to cook at home.

I was literally was there with my family and friend in the audience back in 1988. As I watched this video now, I saw us appeared 8 different times in this Episode. I still have Martin & Jacques autographs in my scrapbook and had made the Ballotine Chicken successfully.

Both men are humble masters and excellence teachers. This is *real* cooking and teaching. There is nothing like it on TV today.

Umm, you're half correct. Jacques is totally humble, but Yan is just the opposite. Saying his new awesome dish should get the Nobel Prize? And MANY other conceited comments... He actually likes to brag, although he does do it with a hint of humor.

Chef Yan was very kind to Chef Pepin: at a live event which must have happened about the same time as this episode (judging from both men's ages), I saw Chef Yan debone a chicken in 22 seconds (timed it myself) - half the time it took Jacque, but Martin didn't show him up.

How does that PROVE that Yan is humble? It doesn't. You like to count things? Why don't you count the number of times Yan brags about himself in this video, then compare that to Pepin. And you can still claim that Yan is a 'humble' chef? Lol. Get real. Being arrogant and cocky is one of Yan's DEFINING traits, it's his style to be cocky. Let's call things for what they are, and not MISCHARACTERIZE people -- that's the Trump way of behaving.

I am right now. I'm a professional chef, based primarily on my experiences watching PBS cooking shows with my grandmother when I was growing up. I watched these like other kids watched cartoons.

Omg Pepin literally bringing the heat for no reason. That back of the knife trick crushed yan's soul. Legend has it the other chicken is still roasting today having never been touched for fear of desecrating its perfection.

You can tell Jacque is in a league of his own. So young, so precise. He is and always will be my inspiration. From a young boy watching him and mrs Child’s, to a 33 year old chef cooking “fast food my way” with my daughter and hopefully one day with my granddaughter. He is a culinary master and father that I inspire to me. Merci chef... Merci Jacque.

I remember watching Jacques and Julia Child every weekend on PBS. As everyone says, Jacques is a master of cooking which he is. He explains how to do things step by step, and shows you how you can improve your cooking skills to show you new gateways to new food

I can remember watching this episode on public television with Yan and Jacques, so, so many years ago. Thank You Yan. Thank You Jacques. You both helped a little boy discover the taste and zest for cooking, humor, love and life! I feel like I’m watching a ‘Charlie Brown’ special. So many memories, so many feelings of comfort and warmth.

Martin Yan is such an amazing chef. I remember having hard days growing up. When he was on T.V. he made it so I was able to be in the moment and let go of the hard aspect. I feel the same today. Also, I love the way he and Jacques cook together. Thank you for sharing!

That was absolutely insane how fast he deboned that chicken. He allways tends to make everything look so easy! Jacque was in his prime here. Absolutely beast/ God mode cooking.

Jacques is a master. Martin Yan is a great chef but you can clearly tell he is in awe of him. The way he dresses that chicken is unreal. I don't think there are many people that have that kind of skill with a knife. That takes years and years of dedication and a love of cooking not to mention he probably had great teachers in France.

jacques came to impress, and impress martin he absolutely did, going all out on the chicken and doing it with a puny knife relative to the chinese knife martin uses. happy to see the respect was mutual, too, jacques happily praising martin and the things he learned from chinese cooking

Both of them have done thousands of dishes / prep. Jacque, is classically trained. He started at the bottom. He probably did crates of chickens every day. Same for Yan..... Decades of perfecting the craft. Prep work is hard work.

To look at them both you can tell how long ago 1988 actually was. Martin Yan is in his 70s now, the venerable Jacques is in his mid-80s.

What a joy to see these two together!! The 80s and 90s were the golden age of cooking shows in my opinion and I spent my weekends with my father watching Martin Yan, Jacques Pepin and others make cooking accessible to us mere mortals. While I do not consider myself a good chef, I can make a decent meal.
