Hi everyone!
This recipe is the Salty Caramel Financier that many people have been asking for!
I've been testing and modifying this recipe many times over the past week.
Fortunately, many people who have tried this said they have never had such delicious ones.
Contrary to the light texture of my previous financier recipe,
This one contains more powder than my basic formulation and a lot of caramel sauce.
So it has a much richer and more intense flavor.
I also put caramel sauce on the top and sprinkled Fleur de sel salt.
It looks so pretty and tastes really good too.

▶Ingredients (for 12 financiers)
-87g burnt butter (browned butter)
-93g egg white
-68g granulated sugar
-11g corn syrup
-60g All-purpose flour
-60g almond flour
-1g baking powder
-1g Salt Salt
-77g caramel sauce (recipe is here • [Eng]절대로 실패하지 않는 솔티캐러멜... )
* Weigh 108g of butter because it loses about 20% of its weight when burned.
* You can replace corn syrup with honey or trimoline(invert sugar).
* Even if you do not rest the batter, the product will also come out well, and it will inflate more and have a lighter texture.
* When sprinkling salt, if you do not apply caramel sauce on the top, sprinkle it on the batter before baking. If you like to apply caramel sauce on top, sprinkle salt after applying caramel sauce.
1) Put the butter in a pot and heat it to make browned butter and leave it for a while until use.
2) Put the egg white in a bowl, add sugar, salt, and corn syrup, and mix lightly with a whisk so that there are no bubbles and the sugar dissolves.
3) Sift almond flour, All-purpose flour, and baking powder and mix with a whisk until the powder is visible.
4) Add the browned butter chilled to 40-60 degrees Celcius and mix until completely mixed.
5) Add caramel sauce and mix.
6) Rest the batter in the refrigerator for about 1 hour.
7) Fill the mold with 90% of the batter and bake in a preheated oven at 190℃(374℉) for 13 minutes. (Unox Convection Oven)
* If you leave baked financiers in an airy place, you can enjoy it with a crispy texture on the outside in the day you bake them, or after cooling it completely, if you seal it in a plastic or airtight container, the outer crispy texture disappears, and the moisture circulates throughout, making both the outside and inside moist.
* Storage: You can enjoy it for up to 5 days in room temperature. If you want to keep it longer, seal it and freeze it.
