It is really heartwarming to watch this young chef at work. Interesting how he embellishes classic dishes with Jamaican ingredients. Blue Mahoe is definitely on my list of restaurants to visit when I’m next on the island. As always, thank you Matthew for your beautifully detailed videos.

Can you feature Dragon Court restaurant? The cuisine seems to be an Asian/Jamaican fusion with a menu item called reggae fish! It would be interesting to see how the two cultures are represented in their culinary creations given the long history shared by both!

For me, he just spoiled the shrimp and Callaloo. He overcooked the shrimp for me. The shrimp is supposed to be Sautee and put one side until the Until you cook down the collaloo. And everything else, and then put the shrimp back in. I don't like overcooked shrimp.

Everything looks great but was cooked 10 Minutes too Long. Shrimp should have been introduced 3 minutes at the last. Lamb should have cooked to medium rare.
