minimal cooking experience. I decided to cook the curry goat for my family for my refurn from living on my own. I followed your instructions and this is, next to my mothers cooking, the most deliious home made dish i have ever eaten! I went to a local jamaican store/ restaurant to pick up some jamaican curry and the scotch bonnet pepper. I cooked 1 & 1/2 lbs of goat and thus went on half of the original amount of ingredients.

When cooking a tou g tough* meat like goat, lamb or duck, always cover the pot. It helps the steam build and softens the meat plus soaks in the flavor

The thyme and ketchup definately made the difference. My family was astonished on how delicious it was. To the point where my mother asked if i had taken cooking classes. Mind you I used to only cook myself pasta, chicken and rice & beans haha!

Although I tweaked this recipe and cooking time quite a bit to suit my taste, I am so very pleased with the results. As a side dish I made rice and pigeon peas, cabbage, and fried plantains. Was too tired to make the ginger beer. One of the best homemade meals I've made in a while. My 8 year old daughter who loves curry goat says its the best shes ever had.

I use ketchup in my oxtail and goat now!! i swear it was like the secret ingredient i was looking for. I always made it the American way and didnt know what proper things to use. im so happy i started watching vids. now i have perfected my recipes and i know the secrets lol
