In my humble opinion, the Best Jerk chicken in Ja. A few yrs ago stayed in Negril for over a wk, on way to airport asked driver to bring us to place for a last meal before departure, once we settled at airport and tasted the chicken and sausage we were amazed. A must stop for anyone visiting Ja

The way it's cooked affects how dry it gets muchhhhh more than the meat itself. The greatest meat can be ruined with bad cooking, keeping it moist is down to the chefs talent.

It's debatable whether different woods have different flavour. The science suggests that they only have different strengths but the same flavour. It may not even be worth trying to get pimento considering the headache. Would be worth experimenting side by side though

we did an experiment in USA with oak, cherry, and a few other woods when I was at university of Georgia.... the cherry was the best!

@@suddieparry3940 no we made jerk chicken on a regular basis and had got a bunch of hardwood cubes that we added to the charcoal to provide smoke flavour .... there were several woods, like oak, maple, cherry, apple.... the cherry tasted the best by far.... in Jamaica the flavour of the chicken is greatly improved by putting green allspice leaves on top of the remaining charcoal in the last ten minutes of jerking chicken...

Well yes sustainability! I'm in the UK and my supplier told me that Pimento Wood export has been blocked by the Jamaican Government. The sustainability business is reeeeeal! Just to add Apple Wood works just as well if not the actual same its smoke smell is the only difference

Love the shows. However it would be nice to be more descriptive on each location. Especially a map view. I would love to visit majority of the spots. But you show sometime don't give enough instructions to find the locations.
