if I am not wrong, the aired age wood basically means that the lumber is cut and it sits outside in the air and rain before being cut into staves and made into barrels. The aging of the wood basically lets the tannins and such leach from the wood.

There are different batches of this as denoted on the neck label. The batches vary greatly, so try a few different ones.

James e pepper is a delicious pour.. I’m not sure if it’s because of the name but… I’ve had three batches of the James peppers.. and they’re all so black peppery!
