Im a cardiff boy! grew up making welsh cakes with my nan who was from the valley's (so we use a very old recipe) and I must say Mr. Oliver, not bad for a essex boy! love the touch of cream and strawberries! (like flat scones down in cornwall and devon) and to all the welsh people hating on this video are so blind. surely being welsh you should appreciate that the biggest chef in the world is putting our traditional foods on the big screen for the world to see! I just got back from my first trip to the UK and the best thing I brought back was a recipe for Welch Cakes. I love them. Is it a biscuit, a scone or a cookie? Don't care, they are the best. I agree with other comments... they don't need toppings.

Joemartha. You are so right. First thing I learnt in Cookery school and sorry Jamie but they are not traditional Welsh cakes. Your trying to make them into scones. I am from Caerphilly in South Wales and don’t mess with the recipe, no need they are delicious as they are!

The Welsh put lard into their Welsh cakes, if you want authentic then you have youtube and you can find authentic Welsh cakes. A friend used to make these, and boy were they delicious. I am tempted to give them a try myself as I miss their taste. I was in my forties the first time I ever tried Welsh cakes and I have had some wonderful deserts in my time, but these should be on anyone's bucket lists to eat.

My Gran always used lard. Best Welsh cakes I’ve ever tasted. Cooked on a 70 year old iron griddle. I’m sure that thing retained flavour.

i don’t use self raising flour. normal flour and half a tsp of baking powder gives it enough lift without it being a sponge you have to cut in half. Nice try but these are more soft scones

I made them in Cuba at my residence, when I was on holiday there and wanting to show off my Welsh heritage, but they had no soft dried fruit. They said ‘will pineapple be okay?’. I said I’d give it a try with the fresh pineapple but couldn’t promise they’d turn out the same. OH. MY. WORD. Hot off the pan with the little chunks of hot pineapple.. they were deeeelicious!! 😋💖☺️

I remember enjoying some lovely Welsh cakes at a tea shop in Betws-y-Coed, and THEY were served with clotted cream AND strawberry jam. Wasn't the Welshwoman who made them Welsh enough for you?

Okay, so was super excited to make these - ONE MASSIVE MISTAKE - Jamie does not mention that this needs to be UNSALTED butter! I used regular "butter" cause he never said differently plus added the extra salt he suggests and this was so disgustingly salty - not trying to be rude or mean, but I honestly nearly barfed when I tried one! Please be careful on instructions with videos - otherwise they may be okay with unsalted butter...

Ebby Osgood "mixed spice" is a spice blend they use in the UK. Among other things, it has mace in it. I made some - since I can't find any here in the US - by googling for how to make my own blend of it. I just can't recall exactly what is in it.

I'm currently making Welsh cakes now and this isn't how you do it. It's plain flour with baking powder and lard and butter not just butter and you use a bakestone to cook them. You don't add cream to the middle either.

You need a bake stone. Currants only and placed in sugar when still warm. He cut them on the mean side 2. . Cream and strawberry's that's for scones. Sacrilege!. Best ever with a cuppa tea.

Yes. Imho would be better with scones because they’re softer in the middle. With Welshcakes you have 4 ‘hard sides’ instead of 2. Would be a bit too chokey for me. I’m a Welshcakes purist. Why ruin a good thing? lol! Btw, the pan should be dry, no butter to cook, otherwise you’re ‘frying’ them, which means you end up with a harder, more solid texture. They should be firm on the outside and mouth-wateringly soft in the middle. Best eaten hot off the griddle! 🤓

Just made these from this recipe might have to compare to another just to see if there is a better one because there most definitely is. These were a little dry I also added a few more raisins as Jamie was a little bit tight with them. & I don't think back in the day the traditional Welsh house wife's had enough time to whip up cream & pick strawberries that's not Welsh at all🤔

That’s because he didn’t rub in enough to make fine ‘breadcrumbs’ which would have distributed the moisture and allowed them to cook more evenly. They were also too thick. Should be around a quarter inch or under half a centimetre. You also use a dry heat because using butter ‘fries’ the outside before the inside can cook. They should be firm on the outside and moist in the middle with the flour just cooked off to a T. Imho, naturally, lol!

The rubbing in method and cooking style are fairly ‘dry’, which means you need moisture inside the cakes. The fruit adds moisture, so I think the choccie chips would be too dry, despite it sounding good. You could experiment on one or two but I wouldn’t potentially spoil a whole batch. Try a hard fruit like apple, pear or little chunks of fresh pineapple. I’ve tried the pineapple myself and Oh. My. Word. Delish!! 😋 The Apple ones are called tinker’s cakes and you can google the recipe. Good luck! 👍

Never heard of these being called Welsh cakes before. 'Drop scones' is how I know them, only difference from regular scones being the egg and that they are dropped in a pan instead of baked in the oven. Definitely a good one, though.

Not drop scones. Welsh cakes or bakestones because they were traditionally cooked on an iron ‘stone’ or flat steel griddle. Drop scones are made using a different method where you make a batter then ‘drop’ the loose mixture on to the griddle. Welsh cakes are rolled out and cut into rounds.

Absolutely. They’re meant to be thin enough to cook through in a few minutes, NOT thick enough to cut open. You need to make fine breadcrumbs with your fingers, NOT doughy lumps. That way they stay moist in the middle. You also use a dry heat, not a buttered pan, wait for them to puff up, then flip to brown on the other side. Deeelicious hot!!!

You're wrong. Go into any grocer's shop / supermarket in the UK and it says 'self raising' flour on the packet. Perhaps you are from the USA?
