I've watched a few of these Jamie's Italian recipe's now and I can't help but think how much I see The River Cafe's influence coming back through - well sourced quality ingredients, simply presented, letting the food speak for itself.. Just an observation!

Niall Bruce Wouldn't call myself a pesto connoisseur, but the recipes I know of usually dictate adding the oil to the food processor that one time. Oiling the pesto up to a watery consistency is new to me. If you are not affected by any form of vision impediment, may I direct your attention to that ghastly oil residue when the dish was plated?

pesto is an oily sauce for sure and it can be loose like jamie made it here but i just dont understand why he had to use the pesto and then put even more oil on the chicken before he sliced it and then finish it off with more oil on the plate etc. like i get it put some on the salad in case u dont wanna mix it with the pesto but for the chicken there is enough oil already??

People in the comments are arguing about oil. Meanwhile, they eat a packet of potato chips which is 20% or more oil. This is olive oil its good for you and its a huge part of Medetreatina cooking. In Italy, they actually drink shots of olive oil.

This is Georgian dish. It’s known for last 500 years. It’s called chicken tapaka. Tapaka is special pan with heavy cap.

1:04 nope, "pesto" means something like "crushed" (from the latin verb "pisto", to crush, with a common root with "pizza") and it's not related to pasta and paste (which come from the greek word for "spreading", "scattering").

Not trying to argue or criticize, but the Latin word you're looking for is pinsere. Pisto would be the participle in dative/ablative. Yep, Latin is my minor at university.

Nopity nope, I was correct and looking exactly for pisto (pistas, pistare), other verb derived from that. When I was talking about a common root with "pizza", I was referring to the verb pinso it comes from. FYI, somewhere in Rome, a particular kind of pizza is still called "pinsa". Mostly hipster restaurants though...

Looks really good, but seems like a lot of olive oil. Is the last bit at the end when plating put directly on the chicken really necessary or would the oil already in the pesto have been enough?

I hope your restaurants continue to be successful because you seem like you put so much effort into what you do, but I think you should definitely consider serving kosher/halal meat and poultry at some locations too, if you don’t already. You would probably get more customers that way.

Looks like more of a gremolata than pesto 🤔 Great recipe though!

Haha, I was thinking that too! Especially with the coarser chop and added parsley. Gremolata always has lemon zest in it, I think? And maybe an anchovy. The nuts are a very pesto-only thing in my mind, though. But that's all just taxonomy, anyway. Like the lemon juice doesn't seem traditional in either of them, but whooo cares? It looks absolutely delicious to me!!

I would disagree , they are similar but grem usually has less or no oil and not nuts, it's a condiment rather than a backbone.

Pesto shouldn't be a bit cold and the meat hot so the temperature difference make the whole dish an experience ? that means the pesto goes to the side.
