Those look Exactly like the ones I used to eat while in Italy...the fillings are endless, what ever is fresh. The wood oven makes the dish.....hard to duplicate in regular oven but still good Thanks Gennaro :)

This is what Italian cooking should be about. He has fun, he keeps it simple to respect the ingredients. He keeps it traditional but also isn't worried about shaking it up a bit. He is inclusive, rather than a snob who says, "REAL Italian food needs this specific type of cheese from this specific location, otherwise it's just not done right and you're not capable of cooking Italian food."

I 'm glad he used the technique of adding cold water to mushrooms even with with other elements of the calzone in the pan. Plus also, adding salt and pepper last, if you didn't know this adds the flavour to food. Nice video.

I made it from dough, tomato sauce to the final calzone today. This is my first time to do so and it is so delicious!!! I used chicken breast instead of pancetta. I marinated the chicken with salt, pepper and sweet paprika. I'm gonna make pizza for dinner!!! Love you Gennaro!!!^^
