My daughter and I made this today. I've made a bit of bread in the past, but a fair while ago. But it was my daughter's first time (she's 12). We did potato and rosemary. It worked SO WELL. I love your tip about crushing up little boiled spuds. And the tip about rubbing your herbs in oil before putting them on top is a great tip too. Thx so much for your unending generosity in sharing great cooking recipes with us all, inspiring us to cook for ourselves and eat better. We will be making this a lot more! Shalom.

Dough ingredients: 500 grams strong flour, 1 packet (7g yeast), 325ml tepid water, "pinch" of salt, olive oil. A bit of polenta on the tray, and whatever you want on the focaccia. ...I actually prefer Gennaro's basil-tomato version :)

Married into a mostly Italian family, and we all love our focaccia. Special trips down to San Francisco usually involve stopping at Laguaria in North Beach, SF's version of "Little Italy". Never thought of doing it myself, but I think I know what I will be surprising her with in the near future. I'm thinking oven roasted garlic, cherry tomato, and local mushrooms, with a bit of gorgonzola and shredded basil. Gennaro is a treasure, how fortunate to have him as mentor and friend. Thanks Mr. Oliver and co!

To me the trick is the 40 mins rest and then you put the oil... i do it generously enough so that when it's in the oven it penetrates the dough. and when i take out of the oven I put some more... Don't really measure so I cant say exactly how much. Maybe it's not an oil problem, maybe it's the dough that is not being developed enough.....(?)

I love Gennaros version. Tomatoes and Basil is a combination made in heaven. I might try this soon, just waiting until we have our own basil in our garden (I am obsessed with herbs so we often have 3-5 different kinds of basil). Maybe break up some freash mozzarella and put it in with the tomatoes and basil and become gooey... I need this! 😁

Sarah A italian people and bread have a very peculiar relationship. In the old days, bread whas the only staple most families had on their table, except in the mountain regions where polenta took the place of bread. A meal consisted of lots of bread and a little "companatico" to lend in some flavor. At the same time, bread was 8and to an extent is still) very regional. Each Italian city and town has its own type of bread or even more than one type. For instance, in Milano the traditional breads are the luxury "michetta" made with white flour and the cheaper (the once cheaper) pan de mej, made with lesser grains. The style of focaccia shown here is a cross between the one made in the Liguria region (which is flatter though) and the one made in Apulia (where riced potatoes are added to the dough). In both cases, focaccia was eaten as a cheap lunch on its own, while most Italians still eat bread as a side to each and every food they get served (except pasta, risotto or polenta). Therefore, you may want to serve the focaccia as a starter and maybe keep a little handy for snacking.

It IS bread, so it will last as long as you want it to, depending on how you store it, but it also has a lot of oil in it so it won't dry out that quickly

Saeed Mohammed Foccacia doesn't tend to last that long - I would say a day or two, before it gets pretty hard and unpleasant to eat on its own. Of course you can dry it later to create some croutons for the soup/salad or just make some home made breadcrumbs.

Liked because: a) Gennaro b) No 'love' button Might try this with some spinach, onion and feta with a little Alfredo sauce on the side for dipping. Ciò che si mangia con gusto non fa mai male.
