Just a little tip I discovered somehow; get some dried mushrooms (what ever kind you like) and put them in a grinder to turn them into powder. It adds a real earthiness that fresh mushrooms don’t have. I use a repurposed coffee grinder for spices like this. It’s great in loads of things: soups, purées, mushroom “gravy”, etc. It’s an umami taste, like miso ❤️

So true. If added with nutritional yeast, the powder together is really strong! I prefer Craterellus tubaeformis as it is so commond, dries well and has a strong flavor. Craterellus cornucopioides has even more taste, but it difficult to find.

Have to go back through and write the recipe down as I don't have the cookbook. I have a modified version of this. I agree, I have found adding the powdered mushrooms adds more umami, and finely grinding the cooked mushrooms adds a meaty texture. This will be my Thanksgiving "turkey" and no post dinner coma.

I made this again the other day but finely chopped the veg in the food processor before sauteing. I also threw in a cup of bulgar I had hanging out in the fridge plus a small eggplant. What a difference it made in the texture! There is no way anyone could tell it wasn't the old flesh version except that the flavor is out of this world good. And BBQ sauce is a huge improvement over ketchup. Thanks for this yummy recipe.

Hi regular meatloaf uses bread crumbs, an egg for the glue- flax eggs maybe a good substitute? I'm going to use this recipe modified to try stuffed cabbage ? substituting oats - with riced cauliflower, eliminating BBQ (for hunt sauce), eliminating mrs. dash & jalapeño maybe use little veg. broth, flax egg & nutritional yeast?? Idk 😅, mix in with all varied veggies & beans. Stuff'roll Par boiled cabbage, tomato sauce bottom of lasagna pan & place rolled cabbage, top with sauce.. bake 350 covered w/foil 45mins -1 hr. Wish me luck 😅 You both are such a blessing to all of us learning plant based cooking. Thank you so much!

I finally got around to trying this, and oh man it's delicious! I used the Grandpa's Eatloaf recipe which is just slightly different than the version in this video, and I modified it a bit. It didn't include kale but I added it because extra kale is always good I also added some liquid smoke because I like it. I left out the tomato because I don't like tomatoes, and the mustard and sage just because I didn't have any. My mouth was watering at the smell as it cooked, and it tasted as good as it smelled. I'll be making this regularly now. 😋

LOL, yes, egg is used as a binding in meat loaf. This looks delicious and I will be adding this to my bean recipes. My favorite meat loaf (seldom made anymore, alas) uses onion, celery, worchestershire sauce, and poultry seasoning along with salt and pepper. I will adapt those seasonings to this as I found out it was the seasonings folks found they loved rather than the meat! Meat loaf sandwiches were popular the next day, and I think this will be good for that as well.

I had meat eaters come to live with me and heard constantly how I am killing my husband he needs meat etc. He got a Hernia and I caved, he had to have surgery to repair. All I know is blood pressure out the roof on him and weight gain, me too. I felt like crap too. No energy, just three months back to eating this way and his blood pressure is down, mine too but still have it high sometimes. Weight has just came off me. Your channel is a great support for me. Just ordered your newest cookbook and have this one too. So will be digging it out of bookshelf. Thank you I wish you were my neighbors. I know no one who eats this way. I get told all the time you need meat and dairy. Even my doctor doesn't agree with diet. I am going to find another one. Just cannot figure out how. I cannot really pick my own have to go to the one my insurance recommends. I live in Central Florida, and its country.

@Kayte...
@Kayte... 3 жыл бұрын
@@whatisgoingonineedtoknow. Because some people like the taste of meat loaf. Because it helps some people transition to PB. Because it's plant based doesn't mean it can't or shouldn't taste meat based. With that kind of narrow thinking, we couldn't even make the "eat loaf" because it's a substitute for meat loaf. If it can look like it, it can taste like it. So ask them "why not"? The reasons for being plant based usually has nothing to do with flavor. Although it becomes that way when greasy animal fat and meat begins to taste awful after not eating it for years.

However, as binders, you do have the oats which can be used or breadcrumbs, potato chips, etc. Usually, an egg or two is added. Yet, if everything holds together without it, it would be just better. So, I think you have natural binders there.

Love watching you two prepare the recipes from the book. I've had the book for a long time and have made many recipes, but some things just seem like they would take too much time; you have proven differently! Cheers!

Meatloaf is ground meat, onion, seasoning, bread crumbs and an egg. Ketchup or BBQ sauce is put on top. Oatmeal or crushed crackers are sometimes used in place of the bread crumbs. Your "Eatloaf" contains way more veggies than any conventional meatloaf and sounds better by far

You and your mom are so active. My mom and grandma are in poor health. I tell them that their bad health has inspired me to be vegan and wfpb. But it doesn’t inspire them. The last time I have seen older people still with their full faculties was in the seventh day adventist church. One 90 yo didn’t need walker or wheelchair. One 60 year old still had original color in their hair.

This is DELICIOUS. I was wary of the beans, as I dislike the consistency of beans,but they are so good. This whole recipe is out of this world. It’s going to be my go-to for potlucks. I just have to believe this will make converts to more healthy eating.

This is delicious! I made it a day ahead as suggested in the video. I used Trader Joe’s sriracha bbq sauce. I only made half of the recipe (one loaf) but I absolutely should have made the full recipe to freeze a loaf. So good!

I made this the other night. I made half of it as a loaf. For the second half, I tried just throwing the ingredients in a bowl and microwaving until hot and mixing the sauce in. The texture wasn't quite the same but the flavor was fine and it was a huge time-saver. 8 minutes instead of an hour. I used Sweet Baby Ray's sugar-free sauce - because I am trying to lose weight and that only has 15 calories per serving. (But it is higher in sodium, so there is a balance)

I make something similar. I add raw jackfruit which has a chicken like texture. I also put the baking pans with the mixture in it in a microwave oven till it heats up and then it goes into the gas oven. That speeds it up, to half hour. Everything is cooked or partially cooked so there is no noticeable difference. I am India, so, of course there are some spices that constitute curry powder, cinnamon, cardamom, and cayenne and more.We Indians abhor all natural tastes of the vegetables so we have to add generous amounts of spices.

The First 10 Reasons Why I’m Vegan 1) I’m vegan because I don’t want to be mean to any animals: not to dogs, pigs, cats, cows, chickens, turkeys, lambs, rabbits, or anyone at all! 2) I’m vegan because I like to help the environment by not depleting the oceans of fish or to take the whales out and force them to do tricks in swimming pools. 3) I’m vegan because I don’t want to pay anyone to burn down the rain forests to grow crops for cows who we created in the first place. I’d rather that people not rape cows into existence to begin with. I’d rather eat the plants directly instead of filtering them through an innocent animal who doesn’t deserve to die. 4) I’m vegan because I don’t want to pay anyone to pin down mother cows & force them to be pregnant and then to kidnap their baby boy cow for the purpose of murdering them, just so people can steal their milk and sell it in stores to use for their taste pleasure. 5) I’m vegan because, if I don’t feel right eating bacon, sausage or ham, because that means paying people in the pork industry to cut the tails, testicles & teeth off baby boy pigs & kill them at just 6 months old. I just don’t want anyone to do that to them. 6) I’m vegan because I don’t want to just say that I think animals have moral value. I want to show it with my actions. 7) I’m vegan because if you were the victim, I’d also protect you. 8) I’m vegan because I don’t believe that anyone’s eating disorder was ever the animals’ fault. Eating disorders don’t exist. They are merely THINKING disorders and there is never a good reason to kill an animal just for one’s own narcissistic thoughts. 9) I’m vegan because I learned that eating eggs is unnecessary and that the baby boy chicks are being macerated in giant bloody blenders just because they will never grow up to be able to lay eggs. 10 I’m vegan because I believe in telling the truth, in learning, and in trying to undo the harm I did in the past.
