I like the fact that they covered the stall with plastic see-through curtains to minimize the dust from the traffic in the street. It shows their attention to cleanliness. 👍

I think the reason why he choose to have one stall is because he can manage the food order in reasonable Pace. Having more stalls means more order and he afraid can' t keep the quality of the cook. If course you can add additional manpower, but the chef skill is not something you can pass quickly though, especially in Japanese culture.

Do each of the people who own the food carts get their own designated and permanent spot?
@restaurantman
@restaurantman Жыл бұрын
Yes. In Fukuoka city (where this is located), the Yatai vendors are licensed by the municipal government. The vendors pay rent for their designated spots and are subject to health inspections. As part of those regulations, the stalls are required to be assembled and disassembled each day. This regulatory structure functions as protections for the small business owners and the local Yatai culture. It prevents large operators from displacing the small businesses.

Street food in Japan and Korea when compared to the US is like first class vs economy on an airplane in terms of cleanliness, attention to detail, and service. The only thing is first class costs more than economy but Korean and Japanese street food is often cheaper than US street food. Although lately some US street food have really stepped it up but they cost like $20-$30 a plate. If such japanese or korean places exist in the US they'll completely reshape our food industry. It's sad that US culture prioritize on money and profit not customer satisfaction despite marketing how they care, look at Southwest Airlines. Compare Japanese school lunch vs US and it will shock parents at how poorly our kids are fed in a country that is #1 in global economy and wealth.

A number of street vendors in the U.S. are poor immigrants from countries that have no regulation on food safety or sanitary. When local government in the U.S. should require them to be trained on food safety and cleanliness before allowing them to sell food to customers. Street vendors in Japan are Japanese. They have lived in their culture where food safety / cleanliness / sanitary is normal in everyday life. That's why Japanese street food is better in terms of cleanliness.
@wei8280
@wei8280 Жыл бұрын
@Comedic Farce totally agree with you. It's also culture like you said that the Japanese cares about their fellow Japanese or their customers. Whereas in US it's more of capitalism and just making money for those immigrants. And US local government don't care to enforce or educate food vendors about safety and care, so everything just falls by the waist side in favor of monetary gain. And local politicians don't want to spend the money to regulate because it doesn't matter to them as they see these food to be below them, they will never eat it as their money goes to fancy sit in restaurants. Like many decision makers who ultimately only do and act in their own favor masking under the guise that they are doing in their constituents best interest but really just lies. Look up George Santos.
