Good thing is that their company name is Unchi but not うんち. People are asking why so here it is. うんち=poop But Unchi could be written in different Kanjis like 運知(fortune and knowledge), or 雲地(clouds and earth) etc., the meaning varies depending on how kanjis are used.

@@owitch The menu mentions it is Char-Siu, then @japaneat says, "the pork was sliced super thin, and cooks a little more in the broth" he says cooks a little more, implying it's already cooked? Maybe they just don't overcook it knowing the broth will do part of the work. But I thought Char-Siu implied it was cooked

From what I understand, Japan has smaller farms with safer farming practices and you’re much less likely to get seriously ill from raw/undercooked meat. Raw chicken is a thing there among other animals besides fish. Eggs too.
