Okonomiyaki is a Japanese savory pancake containing a variety of ingredients. The name is derived from the word okonomi, meaning "how you like" or "what you like", and yaki meaning "grill". Okonomiyaki is mainly associated with the Kansai or Hiroshima areas of Japan, but is widely available throughout the country. Toppings and batters tend to vary according to region. In Tokyo, there is a semi-liquid okonomiyaki called 'monjayaki.' お好み焼き
Kansai- or Osaka-style okonomiyaki is the predominant version of the dish, found throughout most of Japan. The batter is made of flour, grated nagaimo (a type of yam), water or dashi, eggs and shredded cabbage, and usually contains other ingredients such as green onion, meat (generally thin pork belly, often mistaken for bacon), octopus, squid, shrimp, vegetables, konjac, mochi or cheese. Okonomiyaki is sometimes compared to an omelette or a pancake and may be referred to as a "Japanese pizza" or "Osaka soul food" お好み焼き

I thought he was saying 'something' CHOY.....and Choy means vegetable in Chinese......so I thought maybe a similar word in Japanese might mean a vegetable.....so I kept thinking he was yelling 'fresh vegetable' or something.

Years ago, I started mixing up what we'd have for "thanksgiving" meal. After researching recipes for my 'Japanese' thanksgiving ~ I made Okonomiyaki with a variety of toppings , miso soup , and had my local sushi purveyor do up a giant platter... w/ mochi ice cream balls for desserts~ It was a hit!

The food always looks ridiculously delicious. The videos showing making mass healthy lunches for schools in Japan makes me weep when I compare them to the garbage they give the kids in US schools. Pure magic to the tastebuds.

He's yelling "irasshai," aka "welcome." Japanese vendors are expected to greet customers in this way, ("irasshaimase" is the full phrase,) it's a cultural thing that you'll hear almost every vendor/shopkeeper saying.

I couldn't believe how beautiful those egg yolks were! I have only ever had okinomi from a place in Toronto called "Okinomi House". They're kind of like a cross between a pancake and an omlette and they're DELICIOUS!!!!!!

The guys screaming in the background reminds me of this creepy guy selling dried sweet plum wrapped in a plastic paper way back in Hong Kong back during the early 80s. He would throw the wrapped dried sweet plum from the street to the higher floor residents and people would yell to him and throw changes from their window to this scary noisy middle aged man who look like a child adductor that sound in the background yelling every 5-10 seconds for 15 minutes straight. He would show up in a very quiet afternoon around 3-4pm. My older sister and I would run back to our room and lock all doors.

I got nothing. Ok so why would someone call out to people passing by a food stall? Hmm... yeah. Still nothing. You guys are right, this is a real mystery. Very complicated situation. A commentary saying what the cook is putting on each time he adds something would be good. e.g. at 2:13 I'm guessing "something brown from a plastic bottle" might be soy sauce or some variant of it? The description says "the batter is made of flour....and usually contains other ingredients such as green onion, meat (generally thin pork belly, often mistaken for bacon), octopus, squid, shrimp, vegetables, konjac, mochi or cheese." I suspect it is the okonomiyaki rather than the batter which contains those things.

Don't know what it is but it makes me hungry, anything oriental makes me hungry. That vender yelling in the background reminds me of when I was a kid and the old farm hands would drive down the street on horse carts selling produce and yelling as they drove around. That all ended in the mid 70's when fear of bay contamination started and they wouldn't allow the horses on the streets in Baltimore.
