That is Nama Panko, Japanese-style breadcrumbs made from soft Shokupan (Milk bread) that is shredded into flakes. When fried, the result is a lighter and crunchier texture compared to regular breadcrumbs.

32:51 have seen his jacket 🤮 I was beginning to think it was just me noticing that it’s dirty. Here in the uk it would be shut down for deep cleaning and if someone turned up to work wearing that in the majority of places he’d be told to go home and get a clean one. If environmental health inspectors saw it same, they’d tell him to leave the kitchen, he wasn’t clean enough to be there. Stains that don’t come out are inevitable…but that’s dirty! I feel quite sick! 🤮 the floor too is gross, in fact there’s so many things that are filthy

hygiene standards seems to be a bit low for this restaurant compared to others, also using the wooden chopstick to stir fry the beef is definitey a no no, the chopsticks are burnt charred
