Fascinating! Love their set up and you can sure tell they've done this before 😀 It is a real art to be able to butcher like that. I'm looking forward to the lard video 😀Loved the curing information too.

I'll have to go back and watch the hog butchering musta missed it but this is how you do your meat breaking remember we used to just cut it up I guess how Mr Jason done it first time taking out the middlin and breaking the shoulder and hams out and cutting them up but I dont wanna ramble on brings back great memories of always cutting up the meats and seasoning them out and lord can't go wrong with a fresh slice of bacon mmmhmm

It looks so easy and simple to do this even gives me the courage to try raising and butchering hogs and cutting them up what kind of grinder does Jason use and I definitely need a set of those knives

Got 3 grinders a 1hp Cabelas had for years, a 1& 3/4 hp Cabelaa& Harold's 2hp Hobart but I use the 1&3/4 Cabelas.. just make sure meat chilled good& any grinder work fine. This is from Jason himself.

I think you are onto something about measuring out your seasonings according to the weight. I didn't do that with some I made, and it was a little bit too seasoned.

. No I aint made scrapple but use hv a friend's wife thst made it for me several times.. she loved make scrapple& liver mush. This is from Jason himself.

No meat on head that I use for Sausage but some folks put jowls in theres..there's... but alot meat on head but just got boil it off& it's process. This is from Jason himself.
