Odd sensor compared to mine. Mine is from a brand called Profidrum and it uses 2 sensors for the cleaning cycle for the nozzles. And there's another plastic cut off sensor at the bottom, that appears to be made of plastic. I wonder if I should source a stainless steel one for the plastic cut off sensor on mine in the future.

Profidrum is a good one. These plastic sensors can be found on the lower quality units. These days the better ones have 3 separate probes controlled by a float-less level switch.

This is really helpful - thanks. The replacement switch looks like it has a larger gap between the floats than the original. Does this mean a wider range between wash and low water? Is this an issue or can you somehow adjust the operation range?

Yeah the range is a bit bigger. There's no way to adjust because that's how the stainless switches are built, but it has not caused any issues whatsoever. It just means the water level will have to drop a tiny bit more before the low water cutoff initiates.
