Looking more human doesn't really mean more powerful, in this case at least. Mahito just looks human because he was born from negative energy directed towards human. Like how Jogo has a volcano head, Hanami has branches for eyes, the octopus one looking like an...octopus.

Basically, the reason why those curses are strong is because they feed of human fears. For example, the volcano head guy, a LOT of people are afraid of volcanoes and he feeds of those fears. In addition, mahito is OP too because he feeds himself from basically every human fears and despair. But still, sukuna is the strongest because he doesnt feed himself any of this fears, he became strong because only of himself because he's a former sorcerer.

Well what Yuuji learned was only how to release/harness cursed energy. He is not using any techniques (Gojou says in episode 6 that Yuuji doesn't have any yet), only releasing cursed energy. Then as Gojou/Nanami says, his cursed energy can't keep up with his physical ability so it creates a second impact after his physical contact.
