​@@ldld64foods with lots of sugar continue to cook even when you remove them from the oven. If you want soft cookies or brownies you better take them out when the middle is still super soft. Besides as long as they were cooked at the right temp they'll still be safe to eat.

Nah, just one of the fun aunties' and "old" cousins' rights 😈 I'm glad you said that though, because Google says I was wrong to think heat would get rid of caffeine like it does alcohol 😬 coffee has a crystalline structure, so it's VERY stable/resilient to heat. Espresso in baked goods does effectively have less caffeine, because you use a smaller amount, but it's still coffee. Being as not-my-kids range from about 8 years-old to less than 1, I won't be giving any of them anything made with coffee or espresso for the next several years. Sometimes, science is a fun-sucker 😑 Please note: I still don't bake/cook with alcohol for not-my-kids. Just the idea scares me. What if I don't do it right? Or, what if I do it right, but it just doesn't taste good to them? Personally, I'd rather not gamble with any of that.

Y’all it’s such a small amount of instant coffee, it won’t be an issue. That’s a massive tray of cookies, so that amount divided over like 20 squares won’t be an issue at all. They’d get more caffeine from a can of soda
