The cakes turned out pretty flat to begin with; but normally, the top part that you cut off becomes the very bottom. Then the middle is automatically flat because the original bottoms are facing together. That gives it the structural soundness it needs. Then the very top can be as rounded as you want. I know she has the tendency to feel bad about herself, but I also know that she knows how to take a joke. She obviously wasn't hurt by the joke, I personally think Julien was apologizing more for getting off track. He could just have a habit of apologizing, it doesnt have to be so deep.
