Hi everyone, it's Taco Tuesday! I am so excited to make my favorite vegan recipe-- Al Pastor Vegan Tacos. When I was diagnosed with breast cancer almost 8 years ago, I incorporated vegan eating into my diet and this recipe was one of my absolute favorites! AL PASTOR VEGAN TACOS RECIPE:
-8oz bag of chopped walnuts
-4 cartons of baby bella or cremini mushrooms
-In a large bowl, finely chop mushrooms and walnuts (or blend walnuts) to the consistency of hamburger meat and set aside
AL PASTOR MARINADE INGREDIENTS:
3 dry red Guajillo peppers with or with out seeds
Soak peppers in hot water for approximately 2 hrs prior
8oz of pineapple juice
5 garlic cloves
1/2 tbs oregano
3 Tbs vinegar
1/2 tsp paprika
1/2 tsp salt
1 Tbs cumin
1 Tbs chipotle seasoning
1/2 tsp red pepper (or black pepper)
1/2 tsp Mexican seasoning
1/2 tsp clove
FEEL FREE TO ADD MORE SEASONING TO TASTE
-Put all marinade ingredients in blender until liquifies
-Pour Marinade over mushrooms and walnuts and let marinade 2-3 hours
-Drain marinade from walnut/mushroom mixture and sauté in a pan
-Finely chop 1 white onion, use 1 Tbs olive oil and cook until you get consistency of ground meat
-Serve with corn tortillas and add whichever garnish you prefer. Enjoy!
