I can relate a Lot to that. I actually do still eat meat but i try to eat Maximum once a week and want to eat a Lot more vegan in General and these recipies never failed to amaze me yet. One step towards No meat by a time, i'll reach there

El Paso Texas gal here. I toast the rice in the oil first, then I add the tomato paste and onions. Learned it in the hood when I was much younger. Es possible que te gustaria.

You can dry roast the rice in the pan, too. I've done it both ways. My favorites are brown jasmine or brown basmati. They are more fragrant than other rices. To me, anyway.

@@FrettedFlipper I think it's much easier being vegan in Mexico than in the US. The tipical household in Mexico include way more legumes, fruits, vegetables, nuts, and seeds. The average Mexican really doesn't eat meat as heavily as the average person in the USA.

Pre-Colombian Mexican cuisine did not include meat. Most of the plants and vegetables that we now consume were actually domesticated by indigenous people from the region. So no, Mexican food isn’t vegan, but it’s certainly much more environmentally conscious than people give it credit - mainly because a lot of the cuisine has been commercialized by the American diet’s demand for meat.

I just want to say that I made 4 of 5 of these recipes for my family for dinner tonight. It’s all gone… they inhaled everything! It was soooo delicious. I didn’t do the egg/tofu and zucchini because I didn’t have any zucchinis. I make tofu sofritas instead and used the leftover sauce to make a chipotle sour cream (with Kite Hill Greek-style yogurt, lime and coriander). WOW. Looks wonderful! Especially love a different way of cooking beans and making salsas! The nutritional yeast blends are the bomb…made them all except the spicy one bc I’m a spice wimp. Making the tofu scramble or chunks with mayo and whichever blend is such an easy way to add to different flavors of the meal. Leftovers are just as delicious. Beans are my favorite food and Bouldin Creeks beans are amazing! I’ve been trying to make them at home for a decade. I’ve taken friends to help me dissect the seasoning flavors and I’ve yet to duplicate them. Soy London Fog and a Slackers Banquet w/side salad is the perfect meal.

That looks tasty!! I absolutely LOVE zucchini so that looks especially amazing and I definitely will be giving it a go... The zucchini mixture reminds me of when I used to make frittata's. This would be a great alternative. If I had leftovers from this dish I would add fried potatoes to the zucchini mixture and top with your mild salsa recipe. Tortilla chips crushed in - great taste and texture added. With the rich, red salsas, it’s a beautiful meal! Hi, Derek. Found a bean video! Yay! I start my Spanish Rice by browning the rice in a little bit of oil until pinkish. Then, I add boiling water, tomato paste or sauce, and spices. Toasting causes the rice kernels to burst kinda when the water is added. One just has to get the moisture right to not create a too-soft outcome.

I love your videos, my favorite part of your videos are when you click the tongs, and Frankie's voice. I used to buy masa harina and make my own tortillas, I learned I had to add some white flour to the masa if I wanted to be able to roll them. When I made them with all masa, they were stiff, I couldn't fold them. They still tasted good. Thank you for all of your videos, you're my favorite vegan chef. Wow. Love all your videos but especially the latest ones. This one I just had for dinner but unfortunately I had to make just a couple of adjustments as, yes, you wouldn’t believe it I really don’t like nutritional yeast!!! and I had some chilli beens made.
